This one is my husband's favorites!! Garlic Herb Pork Tenderloin with Roasted Potatoes and Carrots, with gravy. This comes out to 11 SP per serving! Please note in the beginning I say what's in the topping, but I forget to say there's also 1/2 Tbsp of olive oil. I do say it later when I put the topping on.

The best recipes of your day: easy to prepare
INGREDIENTS:
6 medium potatoes, peeled and quartered
2 tablespoons olive oil
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
1 1/2 teaspoons chopped fresh chives
salt and pepper to taste
1 (4 pound) boneless pork loin roast
1 teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper to taste
Directions
Preheat oven to 350 degrees F (175 degrees C).
In a pot with enough water to cover, boil the potatoes for about 10 minutes. Drain, cool, and place in a bowl. Toss with olive oil, 1/2 teaspoon thyme, 1/2 teaspoon garlic powder, chives, salt, and pepper.
Rub the pork loin roast with 1 teaspoon thyme, 1 teaspoon garlic powder, and onion powder. Sprinkle with salt and pepper.
Place the roast on a rack in a shallow roasting pan, and cook 50 minutes in the preheated oven. Arrange the potatoes around the roast, and continue cooking 50 minutes, to an internal temperature of 145 degrees F (63 degrees C). Remove from heat, cover with foil, and let sit 15 minutes before slicing.

AIR FRYER MODIFICATIONS: The recipe is for baking in the oven. To air fry this, I sprayed my air fryer basket and air fried for approximately 25 minutes (I like my ends super crispy). For more even cooking, I would recommend baking in the oven.

Potatoes are one of those ridiculously versatile ingredients that, even though we think we’ve had them every which way, never cease to surprise us when we make them differently. While we’ve made hundreds of batches of roasted potatoes, we decided to take a Greek approach this time – something we hadn’t ever tried before – and went heavy with the lemon juice and olive oil. Along with plenty of garlic, mustard and typical Mediterranean herbs, these potatoes turned out perfectly crispy, with a deliciously bright flavor that will have you completely hooked.
