Fermented Canned Liver Pate Recipe, Liver Pate, Fermented, Using a Starter, Hot & Spicy
Liver pate is a nutrient-dense superfood made from a mixture of cooked liver, some type of fat, onion and garlic, and seasoning that is rich in copper, iron, selenium, riboflavin (vitamin B-2), phosphorous, magnesium, iodine, zinc, chromium, and Coenzyme Q10. In this recipe I used store bought mayonnaise for my fat and fermented onion brine as my starter.
Unfortunately cooking liver destroys vital water-soluble vitamins including vitamins C and B’s. Thankfully, fermentation creates and increases water soluble vitamins destroyed in the cooking process.
Fermenting liver pate is as simple as adding a starter such as brine, fermented water kefir, kefir whey, yogurt whey, kraut juice, kombucha or rejuvelac to your favorite liver pate. Of course you can refrigerate your liver pate immediately upon adding a starter but please know that cooler temperatures slow down the fermentation process meaning it will take longer for your liver pate to ferment than if left in an airtight jar on the counter.
If left on the counter in an airtight jar, liver pate will ferment in approximately 3-7 days at temperatures of 70F degrees. If immediately refrigerated it could take upwards to 2 or 3 weeks to ferment depending on how cold your fridge is.
Fermented liver pate takes on a slightly soured taste but still tastes like liver. Fermented liver pate can be eaten in all the same ways you would normally eat pate; with eggs, on toast, on crackers, or as a side dish with legumes, meat, vegetables and/or potatoes.
Liver pate can be made from chicken, duck, pork, wild game, turkey, bison, beef, or lamb. And while it is normally unadvisable to consume raw chicken liver, fermentation destroys many of the harmful bacteria that causes raw liver to be unsafe for consumption. For this reason, fermented liver pate can be made from both cooked or raw liver.
Fermented liver pate can be safely consumed once or twice a week for optimal health and is highly beneficial for people with low iron or iron deficiency.
