Aromatic Creamy Herb Chicken in 30 Minutes
This creamy herb chicken is a delightful and delicious combination of boneless, skinless chicken breasts cut in half which are spiced with garlic powder, onion powder, thyme, rosemary, salt, and pepper. The dish is served up with a sauce consisting of milk, minced garlic, thyme, rosemary, salt, and pepper. Believe me it is simple out of this world. With a side dish of mashed potatoes, or rice, your family and friends will be back for more.
As always, you can change the recipe in any way you like. In example, if you are not a garlic lover, leave it out. If you are, simply add more. I add dried herbs as I find they are so much more handy, but you can add fresh if you have them on hand and are so inclined.
I always cut the breasts in half as they cook better, more evenly, and I have more control in the cooking process. If you want them whole, simply adjust the cooking time accordingly. We always use 2 percent milk as it is a bit healthier but half and half or whole cream can be used too.

Ingredients:
2 large boneless, skinless chicken breast cut in half
1 tsp of dried thyme
1 tsp of rosemary
1 tsp of onion powder
1 tsp of garlic powder
1 tbsp of minced garlic
1 cup of milk
1/2 cup of mixed vegetables
1 tbsp of milk diluted in 1 tbsp of corn starch
1 tsp of parsley
1 tsp of salt
1 tsp of pepper
olive oil and butter for frying
Method:
Mix all of the herbs and spices together in a small bowl and use half of them to season both sides of the chicken.
Add some olive oil to pan heated over medium high heat.
Place the chicken in and cook until no longer pink and browned on both sides. This should take about 5 minutes on each side.
Set the chicken aside on a plate.
In the same pan, add more olive oil, the minced garlic, and saute it for a few seconds until fragrant.
Place the remaining herbs and spices in and saute until they are fragrant.
Pour the milk in and bring it to a boil. Add in the corn starch. Simmer and stir and allow it to thicken.
Place the chicken back in, spooning the sauce over it, and allowing it to reheat.
Garnish with fresh parsley, serve and enjoy your creamy herb chicken.

Ingredients for Lemon Pepper Chicken:
- Chicken, large pieces with bones- 500 gms
For Marination:
- Salt- 1 tsp
- Crushed Pepper- 1 tsp (coarse granules)
- Lemon Juice- 2 tsp
- Thick whisked curd/yogurt- 2 tbsp
- Ginger Garlic Paste- 1.5 tsp
Whole Spices:
- Green Cardamom- 3
- Cloves-3
- Cinnamon- 2
- Black Peppercorns- 10
Other Ingredients:
- Whisked curd/plain yogurt- 4 tbsp
- Crushed Pepper- 1/4 tsp
- Green Chillies, slit- 4
- Garam Masala Powder- 1/4 tsp
- Oil- 3 tbsp
- Butter- a dollop (1 tbsp)
- Coriander leaves, finely chopped- 1 tbsp
Preparation:
- Crush the black peppercorns.
- Marinate the chicken pieces with items indicated. Mix & set aside for 1 hr.
- Whisk the curd/yogurt.
- Slit the green chillies and fine chop the coriander leaves.
Process:
- Heat oil & butter in a flat pan and add the whole spices.
- Once it splutters, add the marinated chicken & fry on high heat for 1 min and then flip the chicken pieces.
- Continue to fry for 2-3 more mins on high turning the pieces a few times.
- Add the balance marinade and continue to fry on both sides for another 5 mins on medium heat till evenly browned.
- Now reduce the heat to low, add the whisked curd/plain yogurt, 1/4 tsp crushed Pepper, slit green chillies and mix everything well.
- Cover & cook on low heat for 15 mins, flipping and stirring after 10 mins. Cook till the liquid has nearly dried and the chicken is tender.
- Now add the garam masala powder, mix well and fry for another 5 mins till the chicken pieces are browned.
- Garnish with finely chopped coriander leaves and serve hot.

Ingredients:
6 - 7 chicken thighs, bone in
3 - 4 tbsps Green Seasoning
2 tsps onion powder
Salt and pepper to taste
3 tsps Jamaica Valley Chicken spice
2 tsps paprika
2 tsps minced fresh rosemary
1 1/2 tsp minced fresh thyme
4 cloves garlic, minced finely
1 - 1 1/2 tbsp fresh Lemon juice
1 tbsp canola oil to cook the chicken
1 1/2 cup low sodium chicken broth

Herb Marinated Chicken: his is hands-down the best chicken marinade you will come across. Not only is it easy, it’s absolutely delicious and a perfect way to use any herbs you have in the garden. I’m using a secret ingredient in this recipe which is mayonnaise. If you have never marinated with mayo before, you are seriously missing out. Mayo locks in the moisture and takes any of my chicken recipes to the next level. Being Bulgarian, my family loves to marinate with anything creamy such as yogurt, sour cream, or mayo. Most times we use yogurt in my family to lighten things up, but you are more than welcome to use mayo or sour cream as a substitute. If you’re not a fan of either or, you can definitely leave it out as it will be delicious regardless. This recipe is perfect for lunch, dinner, or meal prep. The longer the chicken sits in this marinade, the more tender and juicier it will be. Trust me, you have to make it as it will be your new favourite way to marinate from now on. This recipe makes 12 skinless boneless chicken thighs so feel free to adjust accordingly. salt and pepper to taste
heaping tablespoon of mayonnaise
handful of fresh basil parsley, and oregano — use any herbs you like
4 peeled garlic cloves
juice of one lemon — 1/4 cup
