How To make Herbed Chicken Mozzarella
6 Chicken breast halves
2/3 c Buttermilk baking mix
2 tb Grated Parmesan cheese
1 t Paprika
1/4 ts Black pepper
1/4 ts Basil
1/4 ts Oregano
1/4 ts Marjoram
1/4 ts Rosemary
1 d Nutmeg
2/3 c Chili sauce
3/4 c Mozzarella cheese --
Shredded
1. Grease a 13 x 9 x 2-inch pan lightly. 2. Mix the
biscuit mix with the Parmesan and all the spices. Put mix into plastic bag; add chicken and shake to coat evenly. Place the chicken, skin side down, in the pan. 3. Bake in a preheated 425-degree oven for 45 minutes.
4. Turn the chicken and spread with the chili sauce,
dividing evenly over the chicken breasts. Sprinkle with the mozzarella and bake until cheese is melted, about 5-7 minutes longer. Recipe By : Jo Anne Merrill

These are the true flavours of Italy, chicken thighs are used for their stronger flavour and moisture. Mozzarella cheese is originally from Southern Italy and traditionally made using buffalo milk. If you can buy Buffalo mozzarella, it’s well worth the extra. Triple smoked ham gives you that beautiful smoky flavour that permeates throughout the chicken. The tomato sauce is optional but goes well with it. Enjoy with a great white wine such as a Chardonnay or if you prefer reds, a light Pinot noir.

The Best Chicken Mozzarella - 5 Ingredients!
Chicken Mozzarella...an easy one skillet meal loaded with Italian flavor! The trick to this quick 1 skillet weeknight meal is using my favorite jarred marinara sauce and I show you how to keep the chicken juicy!

Ingredients
2 Chicken Breast (12 ounces total)
1 teaspoon Italian Seasoning, Divided
Salt and pepper
1 24oz Rao's Marinara (or your favorite sugar-free marinara)
1 Cup Shredded Mozzarella Cheese
2 Tablespoons Avocado oil
Equipment
Meat Thermometer
Sharp Chef Knife
Oven Safe Skillet
Instructions
Place the chicken breast on a cutting board and using a sharp knife, cut each breast in half lengthwise (see notes) resulting in 4 chicken cutlets.
Season each side of the chicken breast cutlets with salt, pepper, and 1/2 teaspoon of Italian seasoning.
Add the avocado oil to a large oven proof skillet (such as cast iron or stainless steel) and heat over medium-high heat. Brown each side of the chicken cutlets and cook until a meat thermometer reads an internal temperature of 150F.
Remove the chicken from the pan to a plate and set aside. Pour the marinara in the skillet and scrape any browned bit from the bottom of the pan with a spatula. Return the chicken to the pan and top each cutlet with 1/4 cup of shredded mozzarella cheese, followed by the rest of the Italian seasoning.
Trun your oven on HI Broil and set the rack to the middle of the oven. Place the mozzarella chicken in the oven and broil until the cheese becomes browned and bubbly...about 5-8 minutes
Remove from the oven and check for proper chicken temperature of 165F using your meat thermometer. Serve.
Notes
To cut the chicken in half lengthwise - place one hand flat on top of a chicken breast and, holding your knife parallel to the cutting board, slice it horizontally from the thick end to the thin end.
Avocado Oil - Better for searing as it has a higher smoke point than olive oil or butter.
Avoid Overcooked Chicken - Sear the chicken breast until the internal temperature is around 150F. This will allow us to continue to cook the chicken in the oven without it over cooking.
Oven Safe Skillet - If you do not own an oven safe skillet, you can brown each chicken cutlet in any skillet you have and pour the marinara sauce into a casserole dish, followed by the browned chicken and the cheese. Continue with step 5.
Checking for Doneness - To properly check the meats internal temperature, you need to check the temperature of the center of the meat.

Ingredients for 4 people:
4 chicken breasts - steak
Salt and pepper
1 tablespoons of oil
250 g of cherry tomatoes
½ cup of basil
200 g of cream
100 g of cream cheese
125 g of mozzarella
Parmesan cheese
Herb butter
Wash the meat and pat dry with a kitchen towel. Season with salt and pepper. Heat the oil in a pan. Bake the steaks all around for about 5 minutes.
Wash the tomatoes and cut in half. Pluck, wash and finely chop the basil leaves.
Boil the cream in a saucepan. Add the cheese and let it melt. Season with salt and pepper. Add 2/3 of the basil.
Put the meat and tomatoes in a baking dish with oil or butter. Pour in the sauce. Finely dice the mozzarella and sprinkle over the meat. You can also spread grated Parmesan cheese and 1 tablespoon of herb butter flakes.
Bake (200 degrees or 175 degrees with fan on) in a preheated oven for about 30 minutes.
Remove and sprinkle with the remaining basil. Croquettes or rice match well as garnish.
