1 lg Spaghetti squash (3 lb)
4 tb Unsalted butter; cut in bits
5 lg Cloves garlic; peeled, halve
4 oz Smoked or plain mozzarella
-cut into 1/4 inch dice 1 c Basil leaves; packed finely
-shredded
NUtrITIONAL INFORMATION/SERV:

seeds. Place cut side up in baking pan; add butter and garlic to hollow centers. Sprinkle with 1/2 t salt and 1/4 t pepper. Cover thightly with foil; bake 1 1/2 hours or until very tneder. (To microwave: With fork, pierce whole squash severl times. Place in glass baking dish. Cook in HIGH 18 minutes, turing squash every 4 minutes. Let stand 5 minutes. Place butter in small glass bowl; melt on HIGH 30 seconds. Add garlic; cok on HIGH 1 minutes; with fork, mash. Halve squash lengthwise; seed.) 2. Remove squash from oven; discard foil. With fork, transfer garlic to
small bowl; mash. With fork, comb squash strands into large bowl. Add mashed garlic, cheese and basil; toss. Season to taste with additional salt and pepper. On this week's episode of Crazy Delicious Cooking we're serving up a low carb option. Honestly I feel like a lot of people forget about spaghetti squash as a pasta substitute. It does take a little longer to prepare than pasta but it tastes amazing and is a nutrient-dense food, meaning it's low in calories but high in several key vitamins and minerals. In particular, spaghetti squash is a good source of fiber, vitamin C, manganese, and vitamin B6. So skip the pasta next time and try out our recipe for Cheesy Garlic Parmesan Spinach Spaghetti Squash.
There are no side dishes needed with this one - just one spaghetti squash, split down the middle and shared between two people. For this recipe the real star of the show is the sauce. It's creamy, it's garlicky, it's thick, it's freaking delicious! Roasting the spaghetti squash takes the most time in this process so make sure you have enough time set aside (approx. 40-60 mins).

5 oz. fresh spinach
1/2 cup heavy cream
1 Tablespoon cream cheese (optional but delicious!)
1/2 cup grated parmesan cheese
Salt and pepper to taste
Grated mozzarella cheese for topping

16oz spaghetti
1lb ground beef
1lb mild Italian sausage
white onion
bell pepper
garlic cloves
green onions

8oz sour cream
5oz cottage cheese
4oz cream cheese (room temperature)
grated parmesan cheese
16oz mozzarella cheese
dried parsley (garnish)
Cheesy Garlic and Herb Spaghetti Squash with Meat Sauce
If you are looking for an easy weeknight dinner, this is the one! Cheesy, flavorful, and so quick and easy! RECIPE DOWN BELOW:
INGREDIENTS:
For Roasting Spaghetti Squash:
-2 large spaghetti squash
-6 cloves garlic
-1 Tbsp. olive oil
-salt and pepper to taste
For Sauce:
-1 lb. lean ground beef
-1 medium onion, diced
-1 tsp. salt
-1/2 tsp. black pepper
-1 tsp. oregano
-1/2 tsp. ground cumin
-24 oz. marinara sauce
Topping:
-1 1/2 cups grated mozzarella cheese
-chopped basil
INSTRUCTIONS:
1. Preheat oven to 425 degrees. Cut two large spaghetti squash in half, lengthwise.
2. Scoop out the seeds. Add 4 whole garlic cloves inside the squash (1 for each half). Drizzle on olive oil and season with salt and pepper to taste. Flip squash face side down.
3. Bake squash for 40 minutes until tender.
4. For the meat sauce, heat the pot over medium-high heat. Add in 1 lb. of ground beef and let that cook for 5 minutes. Then add in 1 medium diced onion, 1 tsp. salt, 1/2 tsp. black pepper, 1 tsp. oregano, 1/2 tsp. ground cumin, and 24 oz. marinara sauce. Let simmer on low heat for 20 minutes, covered.
6. Once the squash is out of the oven, flip it face-up, and mash the garlic into the squash. Then use a fork to scrape the squash into strands.
7. Spoon in the meat sauce mixture and top with grated mozzarella cheese.
8. Broil on high for about 2-3 minutes, or until the cheese is melted. (It can burn quickly so be sure to watch it!)
9. Garnish with chopped basil, and enjoy!
