Black Bean Soup (healthy & easy dinner idea)

⭐️ Black bean soup is a tasty, nutritious, and hearty meal that's easy to prepare with everyday ingredients and even easier to customize to make it more or less spicy, smokey, or creamy with simple toppings and spices.
⭐️ Ingredients
2 tablespoons (30 grams) olive oil
1 large onion chopped
2 medium carrots chopped
2 ribs celery chopped
4 cloves garlic grated
2 teaspoons cumin ground
1 teaspoon chipotle powder or ½ teaspoon red pepper flakes
2 bay leaves
3 cans (15-oz each) (3 cans (720 grams)) black beans
3 cups (720 grams) vegetable broth
1 can (15-oz) (1 can (400 grams)) diced tomatoes
1 teaspoon salt
¼ teaspoon black pepper
2 limes

Hearty Vegetarian Chili
This meatless chili is packed with so much classic chili flavor that you won't even notice that there's no meat!
INGREDIENTS
For the Chili:
1 small diced yellow onion
2 seeded and small diced red bell peppers
2 seeded and small diced jalapeños
4 finely minced cloves of garlic
1 tablespoon of olive oil
1 peeled and large diced butternut squash
2 sliced zucchini
2 cups of dry lentils
2 cans of garbanzo beans, drained
2 cans of Heinen’s 3 Bean Blend, drained
three 28 ounce cans of diced tomatoes
1 tablespoon of dry oregano
2 tablespoons of chili powder
1 tablespoon of cumin
3 cups of vegetable stock
½ cup of tomato paste
Kosher salt and cracked pepper to taste
For Toppings:
lime wedges
sour cream
fresh cilantro leaves
shredded Chihuahua cheese
shredded cheddar cheese
diced avocado
sliced green onions
sliced swiss chard or greens
PREPARATION
1. In a large pot on high heat brown the onion, peppers and garlic in olive oil.
2. Once brown add in the squash, zucchini, lentils, beans, tomatoes, oregano, chili powder, cumin and vegetable stock and simmer on low heat for 45 minutes or until the lentils and butternut squash are tender.
3. Thicken the soup with tomato paste, adjust the seasonings with salt and pepper and serve alongside suggested toppings.
Three Bean Vegan Chili Recipe - high protein meal
A hearty vegan chili recipe, with plenty of beans to provide lots of protein. This chili is best enjoyed during winter months, or when you are in need of some comfort food!
We've replaced the meat source with Kidney Beans, Cannellini Beans & Black Beans. These provide a good source of protein, as well as adding texture to the meal.
This is a relatively easy meal to make, taking just over 1 hour to make, with around 15 minutes of prep time. We have oven cooked this dish, as we think it brings out more flavours, but you can also cook this on a stove.
You can serve this with a variety of things, such as rice, tortilla chips or a tortilla wrap.

Three Bean Chili Recipe
(This is for mild chili. If you like it spicy, use more of the spices or leave the seeds in for the jalapenos)
1 1/2 cup vegetable broth
1 cup of onion diced
1/4 cub jalapeno pepper seeded and diced
2 tsp chili powder
2 tsp ground cumin
2 tsp vegan Worcestershire sauce
2 garlic cloves, minced
two 15oz cans of black beans, drained and rinsed
two 15oz cans of diced tomatoes with the liquid from the can
one 15oz can of kidney beans, rinsed and drained
one 15oz can of pinto beans, rinsed and drained
one 7oz can of hatch chilies (Optional)
Add everything to a slow cooker/Crockpot and cook on low heat for 8 hours. Top with vegan cheese, cilantro and vegan sour cream if you want, otherwise eat it plain for whole food plant based goodness.

4 arbol chiles (dried whole)
4 chipotle chiles (dried whole)

1 whole chuck roast
Vegetable oil
1 white onion, roughly chopped
6 cloves garlic, crushed
4 cups chicken stock
Cinnamon
Ground allspice
Ground coriander
Dried oregano
2-3 Tbsp tomato paste
2-3 Tbsp masa harina
2 limes, juiced
Shredded cheese, for garnish
+ For the vegetable stock:
1 white onion
4 ribs celery
1 bulb fennel
1 parsnip, peeled
3 carrots
1 leek
1 small head cauliflower
2 beets
Vegetable oil
Sprigs of fresh thyme
Small head of garlic, halved
1 bunch parsley
2 dried bay leaves
1 Tbsp whole black peppercorns
1 handful dried porcini mushrooms
2 sheets dried kombu
+ For the vegetarian chili:
