???? 30 DAYS OF VEGAN ???? Kale and bean stew
This month I’m bringing you 30 days of vegan recipes to get you (and me!) inspired about eating plant based! First up is this very simple, but seriously cosy autumn stew recipe featuring cavolo nero (or black kale) that is now in season ???? ????
Serves 4
Prep: 5 minutes
Cook: 20-25 minutes
1 large onion
2 cloves of garlic
Olive oil
400g tinned chopped tomatoes
1 tsp smoked paprika
Pinch of chilli powder
1 tin of butter beans beans
1 tin cannellini beans
1 tin black beans
Zest and juice of 1 lemon
Generous bunch of cavolo nero/kale
1. Heat a generous glug of olive oil in pan. Chop and add the onion and garlic to the pan, cooking for about 10 minutes until soft.
2. Meanwhile, prep your cavolo nero/kale by removing the stems and roughly chopping.
3. Add the tinned tomatoes, beans, smoked paprika, cavolo nero/kale and zest and juice of the lemon. Fill the tin of tomatoes halfway with water and also add.
4. Mix everything together and bring to a boil, reducing to cook for 10-15 minutes. Serve up with crusty bread or some brown rice.

Count me in in the soup lover club. Especially when I heard something like “Minestrone soup” ;), I am always starving for this amazingly yummy Italian soup. Packed with vegetables, beans and pasta, this soup is one pot meal. Serve with toasted bread or garlic cheese bread and a green salad is the perfect way to enjoy this Italian classic soup. This is soup has fix days in my calendar. Once in 2-3 week, this soup must be cooking in my kitchen. Doesn’t matter what season is going on, I can’t hold myself to make this soup. The really good thing about this soup is its dam healthy packed with lots of veggies, fibers, carb. What else do you need???? Have full bowl of minestrone soup and your tummy will not ask anything more. What I really like about this soup is you can make it with your own way. Add any vegetables, pasta, beans and enjoy it with your way. This is dam versatile recipe which you enjoy it anytime.

Ingredients:
1 tbsp oil
1 medium white onion diced
3 medium (200 g) carrots diced
5 small (500 g) potatoes chopped
1 medium (70 g) stalk celery with greens, finely sliced
3 garlic cloves minced
1/2 to 1 tbsp fresh thyme or 1 tsp dried
1/2 to 1 tbsp fresh rosemary or 1 tsp dried
1/2 to 1 tbsp fresh oregano or 1 tsp dried
1 1/2 tsp sea salt or to taste
1/2 tsp black pepper or to taste
1/3 tsp nutmeg
1/4 tsp smoked paprika
1/4 tsp red pepper flakes or less if sensitive to heat
3 cups (720 ml) vegetable broth or water
2 1/3 cup (350 g) frozen peas
1/2 cup (120 g) dairy-free heavy cream or canned coconut milk
2 tbsp cornstarch or arrowroot flour
1/2 cup (120 ml) white wine or more vegetable broth

Tuscan Style Hearty Vegetable Soup for a Rainy Day!
Today, we're diving into a heartwarming Tuscan-style recipe that's perfect for those cozy, cold, and wet days when you need something to warm your soul. We start by chopping up onions, leeks, carrots, celery, and zucchini, along with roughly cut kale leaves. In a heavy-bottomed pot, we sweat these veggies with oregano and garlic, infusing the kitchen with tantalising aromas.
Now, here's the twist: the Tuscan connection with my flair. This recipe takes its inspiration from the rustic kitchens of Tuscany, where hearty soups like this are a staple. Tuscans have been masters of turning humble ingredients into culinary masterpieces for centuries, and this dish is no exception. The use of beans, tomatoes, and fresh herbs harks back to the region's rich culinary heritage.
As our soup simmers away, we blend one can of beans into a velvety puree to add a little creaminess, while the other stays whole, adding texture.
