Jacques Pépin's Hearty Chili Con Carne Recipe | KQED
This week's episode of Today's Gourmet with Jacques Pépin features a hearty chili con carne with just enough heat. This recipe may become your go-to over the chili con carne featured in Jacques' Cooking at Home episode.
He kicks off this eclectic menu with a cute melon ball bowl with port wine and coarse cracked pepper. He also makes a great case for incorporating tarragon into your salad recipes. For dessert, Jacques prepares baked apple rings with ice cream (yum!).

Thick and Hearty Chili
1 small yellow onion, diced
1 green bell pepper, diced
2 ribs celery, diced
2 cloves garlic, minced
2 small carrots, thinly sliced
2 Tbsp chili powder
1 tsp cumin
1/2 tsp oregano
1/4 tsp cayenne pepper (Optional)
1/2 tsp salt
1 15-ounce can chili beans or red kidney beans drained
1 15-ounce can pinto beans drained
2 15-ounce cans diced tomatoes
1 cup beef broth (or water)
Optional Toppings: green onions, sour cream, cheese and corn chips
Saute the onion, bell pepper, celery and carrots in 1 Tbsp of oil for 5 to 10 minutes
Add garlic and spices to the pot and saute for 1 minute
Add beans, tomatoes and broth
Cover and cook on low for 15 to 20 minutes
Uncover and cook an additional 10 to 15 minutes until the carrots and celery are tender
Serve with optional topping if wanted

We’re taking the chill off in the kitchen today with our Chili recipe. What’s great about chili is you can substitute any kind of meat whether is ground beef, wild game or even chunk meat. We’re giving you a great seasoning base and some ideas for your chili and from there you can customize to suit your tastes. Beans- no beans… hey I like a bean to give it an even heartier feel. So we hope you enjoy our chili recipe!

8- 10 servings
Cowboy Chili
2 pounds ground beef (wild game, chunk meat, etc.)
1 large yellow onion, chopped
2 (10 oz.) can Rotel (we used chunky), drained
1 Rotel can water
1 (15 oz) can tomato sauce
1 (16 oz) can kidney beans, drained (or your bean choice)
Green Chile Chipotle Relish (available or 3 - 4 chipotle peppers in adobo sauce, chopped or to taste
1/3 cup chile powder
½ tsp cumin
2 tsp oregano powder
2 tsp paprika or smoked paprika
2 tsp salt
3 tsp minced garlic
1. In a large pot or 12” Dutch oven brown the hamburger over medium high heat. Season with salt and pepper or seasoning of your choice, to taste. As the meat begins to brown, stir in the onions. Continue cooking until the meat has fully browned and onions are tender. If there is a lot of excess grease, drain.
2. Stir in the Rotel, water, tomato sauce, beans, chipotle peppers or relish. Stir in the seasonings. Adjust taste, if needed.
3. Cover and cook over medium-high heat until it reaches a boil. Boil a couple minutes. Reduce heat and simmer for about 40 minutes, stirring occasionally.
4. Serve warm with cheese, onions, sour cream, etc.

We think this is the best Texas chili recipe and the internet seems to agree. In this recipe, we use the flat of a brisket for creating tender morsels of chili meat that doesn't come out tasting like pot roast.
This recipe is in the style of Texas barbecue restaurants and is a chili recipe with no beans.
It's a bit like a chile con carne recipe, but we slowly simmer these chunks of beef until they are one solid soup. In fact, you might find that using an immersion blender after the chili cooking gives you even more of a Texas quality chili. Just buzz it a few times to make it extra broken up and mixed well. :)
Ingredients Used:
• 4 slices thick cut bacon
• 3-4 lb. beef brisket, trimmed
• Kosher salt, pepper, onion powder – for liberally sprinkling on the meat while browning.
• 2 c. white onion, small diced (one large onion)
• 5 garlic cloves, pressed through a garlic press
• 1 T paprika
• 1 T. cumin powder
• 3 ½ T Texas chili powder, such as Mexene or Gebhardt’s
• ½ t. dried thyme
• ½ t. chipotle chile powder
• ½ t. salt
• 1 quart beef broth
• ½ c. strong black coffee (you can save this from your morning coffee)
• 28 oz. can whole tomatoes, in juice

Hearty Chili Recipe
This chili recipe is one of our family favorites. We’ve made it a least 3x in the last two weeks because, for one, it’s so yummy, and two— it’s easy to whip up. Give it a try. It will not let you down.
Hearty Chili Recipe
Serves 6-8
1 large onion, diced
1 bulb of garlic (6-9 cloves), minced
2 lbs ground beef
1 green pepper, diced
8oz can tomato sauce
3 tbsp chili powder
2 tsp cumin
2 tsp oregano
1 tsp paprika
1/2 tsp cayenne pepper
15 oz can red kidney beans
15 oz can pinto beans
28 oz can crushed tomatoes
28 oz can petite diced tomatoes
In large pot, sauté onion and garlic, then add ground beef and cook till brown. Add green pepper, tomato sauce, and spices, and mix well, cooking for another min or two. Then add remaining ingredients— kidney beans, pinto beans, crushed tomatoes and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
Garnish with cheese and sour cream if you like! Enjoy!
