مكونات:
زيت نباتي
400 جرام من اللحم البقري، المقطّع إلى مكعبات صغيرة
200 جرام من البصل المفروم
140 جرام من الكرفس المفروم
100 جرام من العدس
200 جرام من الحمص المعلب ، مصفى
60 جرام من معجون الطماطم (حوالي 4 ملاعق كبيرة)
350 جرام طماطم معلبة معصورة
ملح للتذوق
1 ملعقة صغيرة فلفل أسود
1 ملعقة صغيرة من مسحوق الزنجبيل
1 ملعقة صغيرة كركم
نصف ملعقة صغيرة من الزعفران المنقوع أو لون الزعفران
12 كوب ماء ساخن
100 جرام من الشعيرية
60 جرام دقيق لجميع الأغراض
1 كوب ماء
1/4 كوب كزبرة طازجة مفرومة
1/4 كوب بقدونس طازج مفروم
1 ملعقة كبيرة سمن أو زبدة
تعليمات:
سخني القليل من الزيت النباتي في قدر كبير على نار متوسطة.
نضيف اللحم ونقلبه حتى يحمر من جميع الجوانب.
نضيف البصل المفروم ونستمر في الطهي حتى يتكرمل البصل.
يُضاف الكرفس المفروم ، والعدس ، والحمص المعلب ، ومعجون الطماطم ، والطماطم المعلبة المهروسة إلى القدر. اخلط جيدا.
يتبل بالملح والفلفل الأسود ومسحوق الزنجبيل والكركم والزعفران المنقوع أو لون الزعفران.
يُسكب 12 كوبًا من الماء الساخن فوق الخليط ويُقلب حتى يمتزج.
اتركي الحساء يغلي ، ثم خففي النار إلى درجة متوسطة منخفضة واتركيه ينضج لمدة ساعة أو حتى ينضج اللحم.
أضيفي الشعيرية إلى القدر واطهيها لمدة 10 دقائق إضافية.
في وعاء منفصل ، اخلطي الدقيق متعدد الاستخدامات مع كوب من الماء حتى يصبح المزيج ناعمًا.
صبي خليط الدقيق ببطء في القدر مع التحريك المستمر. يُطهى لبضع دقائق أخرى حتى تثخن الشوربه.
أضيفي الكزبرة الطازجة والبقدونس المفرومة إلى القدر وقلبي.
أخيرًا ، أضيفي السمن أو الزبدة إلى الشوربة وقلبي حتى تذوب.
قدميها ساخنة واستمتعي بشوربة العدس والحمص المغربية اللذيذة!

Ingredients:
Vegetable oil
400 grams of beef, cut into small cubes
200 grams of chopped onion
140 grams of celery, chopped
100 grams of lentils
200 grams of canned chickpeas, drained and rinsed
60 grams of tomato paste (about 4 tablespoons)
350 grams of crushed canned tomatoes
Salt to taste
1 teaspoon of black pepper
1 teaspoon of ginger powder
1 teaspoon of turmeric
1/2 teaspoon of soaked saffron or saffron color
12 cups of hot water
100 grams of vermicelli
60 grams of all-purpose flour
1 cup of water
1/4 cup of fresh coriander, chopped
1/4 cup of fresh parsley, chopped
1 tablespoon of ghee or butter
Instructions:
Heat a little vegetable oil in a large pot over medium heat.
Add the beef and sear it until browned on all sides.
Add the chopped onion and continue to cook until the onion is caramelized.
Add the chopped celery, lentils, canned chickpeas, tomato paste, and crushed canned tomatoes to the pot. Mix well.
Season with salt, black pepper, ginger powder, turmeric, and soaked saffron or saffron color.
Pour 12 cups of hot water over the mixture and stir to combine.
Bring the soup to a boil, then reduce the heat to medium-low and let it simmer for 1 hour or until the meat is cooked and tender.
Add the vermicelli to the pot and cook for an additional 10 minutes.
In a separate bowl, mix the all-purpose flour with 1 cup of water until smooth.
Slowly pour the flour mixture into the pot while stirring continuously. Cook for a few more minutes until the soup thickens.
Add the chopped fresh coriander and parsley to the pot and stir.
Finally, add the ghee or butter to the soup and stir until melted.
Serve hot and enjoy your delicious Moroccan lentil and chickpea harira soup!

How to make an authentic Moroccan Harira
Harira is more than just a soup. For most Moroccans, it is centre of the Iftar (Breaking fast) table. It has almost a cult status and it lives up to the hype. Harira is an amazing tomato soup. It’s a delicious mix of spices and fresh herbs, with vegetables (mainly tomato). You can cook it with or without meat but if you can, use bones and your Harira will be at whole other level !!!
Ingredients:
Beef - Cubed 200 g
Lentils 100 g
Chickpeas 100 g
Shaaria (Thin Pasta) 50 g
Smmen (Ghee) 2 tsp
Olive Oil 2 Tbsp
Salt 1.3 Tbsp
Pepper 1 tsp
Ginger 2/3 Tbsp
Turmeric 1 Tbsp
Cinnamon 1/4 tsp
Egg 1
Flour 50 g
Tomato Puree 400 g
Onions 1 Medium
Parsley 20 g
Cilantro 20 g
Bones 3 Small
Celery 70 g
Water for base mix 300 ml
Tomato Paste 40 g
Water for flour mix 400 ml
Water Hot 1000 ml

Ingredients:
• 250 g lamb, cut into very small cubes (alternatively use beef or skip for vegetarian)
• 1 large onion, finely chopped
• 1 - 2 celery stalks with leaves, medium size, finely chopped
• 100 g dry chickpeas (soaked overnight)
• 100 g green lentils
• ¼ cup finely chopped parsley
• ¼ cup finely chopped coriander
• 3 tbsp olive oil
• 1 tbsp clarified butter
• 400 g tomato puree
• ¼ cup - 50 g vermicelli pasta / shaeiria
• 1 tsp turmeric
• 1 tsp ginger powder
• 2 tsp salt
• ½ tsp ground black pepper
• ¼ tsp cinnamon powder (optional)
• 2 tbsp tomato paste
• hot water
• Lemon wedges to serve
Tedouira/ slurry:
• 200 ml water
• 3 tbsp flour
Instructions:
1. Soak the chickpeas overnight, drain and wash and rinse the lentils, set aside
2. Very finely chop the celery stalks, onion and mince the parsley, coriander and set aside
3. Dice the lamb into small, about 1 cm – 1/2 inch large cubes
4. Heat up 3 tbsp olive oil and 1 tbsp clarified butter in a large pan or Dutch oven, heat up and melt
5. Switch to high heat and add the lamb, stir occassionally until lightly browned on all sides
6. Switch to medium heat, add the diced onions, stir and cook for 5 - 6 mins until translucent
7. Add the chopped celery, stir, cook for 2 mins until fragrant and add the chickpeas
8. Add the tomato puree, stir and de-glaze the pan
9. Add 1 tsp turmeric, 1 tsp ginger, ½ tsp black pepper and ¼ tsp cinnamon (opt.)
10. Stir and cook for 1 - 2 mins until fragrant and add 2 cups - 1/2 liters hot water
11. Bring to a boil, switch to low heat, let it simmer covered for 45 mins
12. Combine 3 tbsp tomato paste with 1 cup of hot water, stir well to combine
13. Add tomato sauce, washed lentils, 2 tsp salt and 2 cups hot water, stir and let it simmer for 30 minutes
14. In a bowl, mix 1 cup - 200 ml water with 3 tbsp all purpose flour, whisk until you get a smooth slurry
15. Add the slurry into the soup while stirring constantly until the slurry is incorporated to the soup
16. Add 50 g vermicelli, the chopped parsley and the coriander, stir in
17. Let the soup simmer while stirring occassionally for another 10 - 15 mins until the soup is thickened and the vermicelli is cooked
18. Serve a bowl, garnish with extra parsley or coriander and generous amount of freshly squeezed lemon juice

Ingredients:English
250 g of Meat (lamb or beef)
1 onion
200 g chickpeas
1/2 cup of lentils
1/2 cup of Rice
100 g vermicelli
2 tbsp Vegetable oil
2 tbsp olive oil
1/3 cup of coriander
1/3 cup Parsley
500 g of fresh tomatoes
2 tablespoons tomato puree
2 tablespoons of flour
Half a lemon and Apio
Salt and pepper
1/2 tsp turmeric
Water approximately 2 liters
Ingredientes:
250 g de carne (cordero o ternera)
1 cebolla
200 g de garbanzos
1/2 taza de lentejas
1/2 taza de arroz
100 g de fideos
Aceite vegetal
1/3 taza de cilantro
1/3 taza de perejil
500 g de tomates frescos
2 cucharadas de puré de tomate
2 cucharadas de harina
Medio limón yApio
