How To make Hamburgers Au Poivre
1 lb Ground Beef 1/2 ts Salt
1/2 tb Freshly CrackedBlackPepper;* 1 tb Brandy Or Cognac; Optional
3 tb Red Wine; Dry, Optional
* Or To Taste. ~------------------------------------------------------------------------- Mix meat and salt. Shape mixture into 4 patties, each about 3/4 of an inch thick. Press pepper into both sides of the patties. Cook the patties in a large skillet over medium-high heat, turning once, until the desired doneness is reached, about 8 minutes. Drain off the fat. Sprinkle the cognac over the patties, immediately ignite, if desired. Remove patties to a warm platter. Stir the wine into the drippings in the skillet. Heat just to boiling, stirring constantly. Serve sauce over the patties. -----

All The Steak Au Poivre Flavor, Half The Effort
It only makes sense to put out a burger recipe after making fun of my burger content last week. We’ve really been crazy about this one lately, and it’s become a recipe we cook more often than we should. It’s such a fancy feeling experience, but really it’s set apart by how it blows every other expensive burger out of the water. It is better than any extravagant burger I’ve gotten at a restaurant. This thing is packed with flavor and totally worth the little bit of extra effort to make the sauce. Try not to lick the plate.

—Ingredients—
6oz beef patties seasoned with salt and pepper
Shredded gruyere cheese
Arugula
Buns (I made this with brioche and didn’t like it once, stick to a squishy white bread one)
Sauce
½ cup beef stock
½ cup Cognac or brandy
1 shallot
1 tbsp green peppercorns removed from brine
Thyme
Touch of heavy cream to thin it out
Salt/ black pepper
1 tbsp butter
2 tbsp kewpie mayo
BLACK PEPPER SAUCE / PEPPERCORN RECIPE
Perfect for your steak, grilled chicken,mash potato. This can be made without alcohol if you prefer. made with black peppercorn and its really easy to make.

3 tbsp black pepper
1 tbsp tomato paste
1/4 cup cream
3 cup beef stock
1 tbsp cornstarch dissolve in water
minced garlic
minced onion
tsp of salt
