How To make Ham and Potato Pancakes
3 lg Potatoes, peeled, grated,
Well drained (about 3 cups) 1 c Chopped cooked ham
1/3 c Chopped chives or green
Onions 1/4 c Chopped fresh parlsey
1 Egg
2 tb All purpose flour
3 tb Vegetable oil
Combine first 6 ingredients in medium bowl. Season with salt and pepper. Heat 3 tablespoons oil in heavy large skillet over medium heat. Using 1/4 cup batter for each pancake, fry batter in batches until cooked through and golden brown, adding more oil if necessary, about 3 minutes per side. Transfer pancakes to paper-towel-lined baking sheet to drain briefly. SOURCE: BON APPETIT, January '93

Cheese potato pancakes!
This is a really easy recipe using ingredients you likely have at home already! The mozzarella can be easily substituted for your favorite cheese - cheddar is a great option.

1 russet potato (400g)
1 tbsp sugar (9g)
1/4 cup cornstarch (34g)
Mozzarella cheese (10g each)
Salt for boiling water
Plenty of oil for high heat cooking

Potato pancakes with ham & cheese / Torticas de papa con jamón y queso
Potato pancakes / Torticas de papa
Boil potatoes. Mash them with a potato masher. Add all of the ingredients together
Ingredients:
4 potatoes mashed
1/4 cup ham diced
1/2 onion
2-3 garlic cloves
Mozarella cheese
Parsley
1/4 cup milk
1 egg
Beat 2 more eggs
1/2 cup bread crumbs
1/2 cup flour
After forming patties dredge patty in flour, then dip in eggs then bread crumbs. Put patties in the refrigerator for 20-30 minutes so patties can stiffen.
Fry patties for 2 -3 minutes on each side. You use an Airfyer. Fry at 400 degrees for 20 minutes (10 minutes each side)
