How To make Potato Pancakes with Juniper
1 1/2 lb Potatoes
Salt & pepper 1 Orange (grated zest only)
6 Juniper berries (or more)
Butter or oil Peel and grate the potatoes. Season with salt, pepper, the finely grated orange zest and the pulverized juniper berries. Divide into six flattened heaps and fry in batches in a mixture of butter and oil until golden-brown and crisp on both sides. Drain on crumpled kitchen paper and keep the pancakes hot (uncovered) in a low oven while you cook the rest. Source: Philippa Davenport in "Country Living" (British), November 1988. How to make German Sauerkraut dish, easy recipe - short version
Here are the ingrediënts we used for two persons:
Saurcraut - natural flavor
Sausages - 2 thick and smoked
Bacon salted & smoked - 1 thick slice
Pig's backfat +-100g
Potatoes - 2 pieces, the size of a fist
Bay leaves - 2
Juniper berries - we've slightly crushed them open for added flavour
White wine +- 125ml
We added a little sunflower oil for our personal taste but you can just as well leave it out if you like.
The meat & saurkraut are allready salty so not adding extra salt will help you keep the different delicious flavors of the dish. Off course feel free to add some to your own personal taste when served.
And don't forget to serve with your favourite spicy mustard!
It will complement amazingly this dish.
