How To make Sweet Potato Pancakes
2 tb Unsalted butter; melted
1/2 c Cooked sweet potatoes
- peeled and chopped - or roughly mashed 1 Egg
1/3 c All-purpose flour
1/2 ts Baking powder
1/4 c Milk (or more)
Sour cream PLACE SWEET POTATOES in a mixing bowl, add egg and mix well. Stir in the flour and add the baking powder. Add up to 1/3 cup of milk, stirring. Stir in 1 tablespoon butter. The mixture should have the consistency of thick, lumpy sauce and be able to coat a wooden spoon. Place a non-stick or heavy iron skillet over medium heat on top of the stove and add 1/2 teaspoon butter. Spoon 3 tablespoons of batter per pancake into the skillet and cook until bubbles rise to the surface of the pancakes and break, about 1 to 2 minutes. Using a spatula, flip the pancakes and cook another 2 minutes. Remove pancakes from the skillet and keep warm on a covered plate in the oven. Repeat the procedure until all the pancakes are cooked. After the first batch is cooked, add as little butter as possible without allowing the pancakes to stick to the bottom of the pan. Serve with sour cream. Makes 12 small pancakes.

Sweet Potato Pancakes written recipe:
Ingredients
1 cup white whole wheat flour
2 teaspoons Baking Powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon Salt
1 large egg
1 1/4 cups Milk
1 tablespoon brown sugar
1 tablespoon vegetable oil
1 cup sweet potato puree
Preparation
1. In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
2. In a separate bowl, whisk together the remaining ingredients.
3. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
4. Heat a large skillet or griddle over medium heat and lightly coat with butter or oil.
5. Pour about 1 tablespoon of the pancake mixture onto the griddle, making as many pancakes as will fit and cook for 2-3 minutes on each side.

Sweet Potato Crunchy Pancakes - Healthy Recipes | Meghna’s Food Magic
Sweet Potato Pancakes made from Root Vegetables
This is for health focussed people; very little flour and all root vegetables like carrot. Sweet potato, onion etc make it a real crispy pancake.
Ingredients :
1 cup sweet potato
1 cup carrot
1 nos medium sized onion
Some finely chopped green chilli/chilli powder
Some finely chopped coriander
1 tsp cumin seeds (jeera - optional)
Salt as per taste
4 tbs plain flour (maida)
1-1.5 tbs water
2 tsp or more oil for frying
Method :
Take a mixing bowl, add 1 cup sweet potato cut into julienne
Add 1 cup carrot cut into julienne
Add 1 nos medium sized onion cut into julienne
Add some finely chopped green chilli/chilli powder (as per taste)
Add some finely chopped coriander
Add 1 tsp cumin seeds (jeera - optional)
(You can add spices as per your choice)
Add salt as per taste
Add 4 tbs plain flour (maida - for binding)
Drizzle 1-1.5 tbs water mix all ingredients well
Further heat up the pan, pour 2 tsp oil
Add spoonful of batter to make small pancakes and spread it with the help of spoon.
(You can also make medium size pancakes from this batter)
Drizzle some more oil on it and cook for 7-8 mins each side on medium to low flame
Cook both the sides until it turns golden-brown.
(Make more pancakes with the same procedure)
Serve these Healthy & Delicious Sweet Potato Pancakes with Dhaniya Pudina chutney!!!
