How To make Mashed Potato Pancakes
1 c Mashed potatoes
2 c Flour, sifted
1 t Salt
3 ts Baking powder
2 Eggs, beaten
1 c Milk
4 tb Light corn syrup
1 t Nutmeg
Combine potatoes, sifted flour, salt, and baking powder. Mix together the eggs and milk and stir lightly into the potato-flour mixture. Add corn syrup and nutmeg and beat well. • 4 Large Potatoes (or you can used leftovers)
• 4 ounces of Genoa Salami (Diced)
• ½ medium Yellow Onion (Diced)
• 4 Lg. Eggs
• ½ cup of grated Parmesan cheese
• 2/3 cup of whole-milk Mozzarella
• ½ cup of Italian Parsley (Chopped)
• ½ tsp. of Salt
• ¼ tsp. of Black Pepper
• ½ cup of Vegetable Oil

Cheesy Mashed Potato Pancakes Recipe

Makes 8-10 pancakes
Ingredients:
3 medium potatoes
1/4 cup (30g) flour
1 egg
1 cup (120g) cheddar cheese, shredded
2 green onions
1 cup (110g) breadcrumbs
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
Oil for frying
Sour cream for serving
Directions:
1. In a large pot of salted water boil potatoes until tender.
2. Peel the potatoes, mash and let cool.
3. Add flour, chopped green onions, cheddar, salt, pepper, garlic powder and egg. Mix until well combined.
4. With your hands, create pancakes from the potato mixture. Coat then with breadcrumbs.
5. Heat 3-4 tablespoons of oil in a large pan. Fry the pancakes over medium-high heat for 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel to drain.
6. Serve with sour cream.
