Ham Balls
While not a tradition everywhere, ham balls are a Midwestern staple. And a lot of times, they're served around Easter as an alternative to the more traditional ham. Either way, this combination of three ground meats with a sweet, tangy sauce on top is a new type of meatball that you will love!

INGREDIENTS
For the ham balls:
- 1 lb ground ham
- 1 lb ground beef
- 1 lb ground pork
- 1 cup graham cracker crumbs
- 3 tbsp grated onion
- 2 large eggs
- 1 cup whole milk
- 1 1/2 tsp salt
For the sauce:
- 1 1/4 cup condensed tomato soup
- 3/4 cup brown sugar
- 1 3/4 tbsp Dijon mustard
- 1/2 cup apple cider vinegar
- 1/2 tsp salt
INSTRUCTIONS
- Preheat the oven to 350°F. Grease a 9×13 baking dish and set it aside.
- In a large bowl, combine the ground ham, beef, pork, graham cracker crumbs, onion, eggs, milk, and salt. Combine until well mixed and homogenous. The important step is to make sure all ingredients are combined.
- Evenly portion into 15 balls and place in the prepared baking dish.
- Prepare the sauce in a large measuring cup by combining the tomato soup, vinegar, brown sugar, mustard, and salt. Whisk to combine and pour over the ham balls.
- Bake in the preheated oven, basting with the sauce every 20 minutes. Bake until the ham balls are firm and reach 160°F internally, 45 to 60 minutes. Remove from the oven and serve.

Glazed Ham Loaf Gluten Free Dairy Free
I grew up in southeast Ohio and a lot of our dishes are reflective of a melting pot of nationalities from Italian to Greek to Polish and even the Amish.
This was a cheap meal that used the leftover Easter ham.
Mom and Grandma would make this often as a satisfying low budget meal. Although I added some tweaks of my own, it is absolutely delicious and it's Gluten Free and Dairy Free.
Ingredients:
1 pound of ham (I used canned ham but you can use leftover ham or even ham steaks ground)
1 pound of ground pork
2 Eggs
1/4 to 1/2 cup of dairy free milk
1 Cup gluten free pork rinds crushed. (you can use GF oats, instant potatoes or gluten free bread crumbs.
1 - 2 Tablespoons dried minced onions or 1/4 of an onion diced finely.
2 Tablespoons honey
1 Tablespoon mustard of your choice (i used dijon)
1 tablespoon dill pickle juice
Pepper
Glaze:
2 Tablespoons brown sugar
2 Tablespoons honey
1 tablespoon dill pickle juice
2 teaspoons mustard of your choice (i used yellow)
1 tablespoon honey
2 tablespoons vinegar of your choice (i used balsamic)
2 tablespoons orange marmalade (optional)
Pinch of ground cloves
Directions:
Set oven at 350°
Mix all ingredients except the glaze and form a loaf and put in an oiled 9 x 13 dish or an oiled loaf pan
Put in the oven for about 1 hour and 20 minutes until internal temperature is at 160° using your meat thermometer
Make your glaze by mixing all glaze ingredients and start basting ham loaf about 20 minutes before done.
To make oven-baked vegetables, mix with dairy free ranch dressing along with salt and pepper and bake along with the ham for about 45 minutes. (i picked broccoli and small potatoes and tested the potatoes with a fork until the fork inserted easily.
