PA DUTCH HAM LOAF -- CAST IRON WEDNESDAY
Ham loaf is very PA Dutch and just as wonderful as it's counterpart, meatloaf! Easy to make, this is always welcomed at the dinner table!

HAM LOAF:
2 lbs ground smoked ham
1 lb ground pork
1 C panko bread crumbs with 1 tsp Italian seasoning OR Italian bread crumbs
1/2 C parsley
4 beaten eggs
Mix all together well and fit into pan or loaves
SAUCE
1 C brown sugar
1 C water
1/2 C vinegar
1 tbs mustard
Mix well together and pour half over ham loaf to start, and rest half way through baking.
Bake at 375F for 1/2 hr to 45 min. If in flatter skillet, less time. In loaves, longer time and test center for doneness. take out and let stand/rest 5-10 min. Serve.

The very best Ham Loaf we've ever made on our Pellet Grill
Ham Loaf has always been one of my favourite foods but cooking it on our Traeger pellet grill smoker makes it that much more flavourful and amazing. it is definitely the very best Ham Loaf we've ever made on our Pellet Grill. Comfort food at its best. The slight smoke flavour that accompanies this dish when cooking it out on our pellet grill is so very delicate but so very flavourful that it brings this recipe to new levels.
To create our very best Ham Loaf that we've ever made on our Pellet Grill you just need some simple ingredients perfectly blended together. We first begin our ham loaf by grinding 1/2 of a lean ham roll in our Kitchen Aid meat grinder to which we add diced yellow bell peppers, diced onions, 1 lbs ground chicken, eggs, bread crumbs, oatmeal, milk, a bunch of spices, old fashion mustard and liquid honey. Talk about a perfect blend of ingredients. No wonder this packs so much flavour and goodness. To top this we've even made a sweet & sour glaze and spread it all over the ham loaf prior to cooking it, during the cooking process and even spread some on our servings. This to die for glaze is made up of apple cider vinegar, honey, mustard powder and some homemade BBQ rub. Here is how we did it.
INGREDIENTS
for the Ham Loaf
1-3/4 lbs rolled ham
1 lbs ground chicken
1 large yellow or red bell pepper diced
1 large onion diced
1 cup of milk
3 large eggs
1/2 cup of Panko crumbs or regular bread crumbs
1/3 cup oatmeal
2 tbs liquid honey
1/4 tsp all spice
1/4 tsp dry mustard
1/4 tsp black pepper
1/4 tsp salt
1 tbs Parsley Flakes
Glaze
1/2 cup apple cider vinegar
2/3 cup of liquid honey
1 tsp dry mustard
1 tbs BBQ rub. You can buy your rub or create it.
DIRECTIONS (MEAT LOAF)
Grind you ham in using a 1/8 plate on your meat grinder
Add ground chicken to ground ham
dice bell pepper and add to meat
dice onion and add to meat
add eggs to mixture
add bread crumbs and oatmeal
add all spices to mix
add old fashion mustard
add honey
add milk
Mix very well and spread in a large greased loaf pan
Poke holes in loaf using a fork
start making your glaze
on a stove top in a pot add 1/2 cup of apple cider vinegar, 2/3 cup of honey, 1 tsp of dry mustard and 1 tbs of BBQ rub
Turn heat on medium and stir until everything is well blended and honey is really liquidy and spices have dissolved.
Remove from heat and
spread a good layer of glaze over entire loaf
start your grill and set to 350ºF
cover loaf with foil
once grill temp has been reached, put your ham loaf on the grill and close cover.
cook for 50 minutes and then remove foil and spread more glaze over entire loaf.
close cover and cook for an additional 30 minutes or until internal loaf temp reaches 165ºF
once internal temp has been reached, remove from grill and cover with foil and let it sit for 20 minutes
remove foil and remove loaf from pan and set on cutting board
cut a nice and big juicy piece from from and

Ham Loaf and Brown Mustard Sauce
Original recipe from Vivian Mowry, a teacher at Milwaukee West Division high school in the 1930s when my mom was also teaching there. This was served to my parents at a party and immediately became one of my dad's favorites. Mom usually served this with baked potatoes.
2 lbs ground ham (easiest to buy ham steak or canned ham and grind it yourself)
1 lb ground pork
1 cup bread crumbs
1-1/2 cups milk
2 eggs
pepper to taste
Mix all above and bake in a ring mold or meatloaf pan set into a larger pan of hot water. Bake for 1-1/3 hours (90 minutes) at 350 degrees F.
(if like me you prefer to make multiple small loafs then the baking time will be only about an hour, but you must make your own best judgement about the baking time.)
The above MUST be served with the following sauce.
Brown Mustard Sauce
1/4 cup brown prepared mustard. (I like stone ground or deli mustard)
1 beef boullion cube
1 tablespoon flour
1/4 cup vinegar ( I prefer apple cider vinegar )
3/4 cup brown sugar
3/4 cup water
Mix brown sugar and flower well. Add to other ingredients in a sauce pan and simmer gently while the meat is baking.

●1/2 teaspoon onion powder

●CHERRY SAUCE:
●1/2 cup cherry preserves
●1 tablespoon cider vinegar
●1/8 teaspoon ground cloves

Great Meal - Hamloaf
Here is the receipe: NOTE : This makes TWO LARGE loaves
Grind 1.5 lbs lean ham & 1 lb ground lean pork & 1 onion
mix in 3 eggs, 1 cup milk, 1 tsp salt (optional) & 1 sleeve of Ritz crackers
to make the glaze:
1.5 cups brown sugar
1.5 cups water
1.5 cups vinegar
1 tsp dry mustard
bring liquids to boil - form hamloaf into two loaves, place in large cooking dish, add glaze. cook on 300 for 2 hours - basting OFTEN.
