Ham and cheese potato croquettes

In my humble opinion, there is no bad way to serve a potato! This recipe combines the best characteristics of the potato - creamy smoothness and crunch.

Baked Potato Recipe (Ham and Cheese)
I do not make baked potato often since it is a bit time consuming but it is worth it. It is perfect during holidays like christmas or any special occasion. You can store it in the fridge for about 3 days and just reheat it in the oven or microwave.
Most baked potato recipe will instruct you to bake them beforehand instead of boiling. We do not have an oven before that is why I got used to just boiling them which helps retain moisture within the potato as well.
Additionally, instead of putting ham, I sometimes use shredded chicken breast or bacon strips. You can experiment with the filling as you wish.

Ingredients:
1kg or 6 medium Potatoes
6 slices Ham
1/2 piece Bell pepper
100 grams Butter
150ml Heavy Cream
3 cups Cheese
1/2 teaspoon Salt
1 teaspoon Ground Black Pepper
Directions:
Soak Potato in water for an hour to loosen dirt.
1. Heat oil in a pan. Fry ham for 2 minutes on each side.
2. Dice the fried ham, bell pepper and butter.
3. Wash potato properly. Use a brush to scrub off remaining dirt.
4. Let it boil over medium heat for 45 minutes. Poke potato with fork to check for softness. Do not overcook to keep the potato skin intact.
5. Carefully cut potato in half making sure that the skin will not break.
6. Hold the potato shell on your palm and gently scoop out the potato flesh using a spoon. Leave some potato on the skin.
7. Add pepper, salt, butter and 2 cups of cheese to the potato flesh. Mix and mash until smooth.
8. Fill the potato shell with about 1 tablespoon of the mashed potato. Add ham and cheese.
9. Use the remaining mashed potato to fill the top of the potato shell.
10. Top with ham, bell pepper and cheese.
11. Preheat oven to 220⁰C for 10 minutes then bake the potato for 15 minutes.
*Use microwave if you do not have an oven.
12. Serve while hot. :)

The Baked Potato

Yield: 1 potato per person
Ingredients
1 large russet potato (If it looks like Mr. Potato Head®, you've got the right one.)
Canola oil to coat
Kosher salt
Optional toppings, such as butter, sour cream, shredded Cheddar and/or scallions
Directions
Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam. Add toppings if using.
