1 tb Saffron stamens
1/2 lb Smen; seasoned butter
1 tb Cinnamon, ground
1 qt Vegetable oil
1 qt Vegetable oil; for frying
10 lb Honey
"This recipe is frankly for historical purposes as its yield indicates suitability for commercial or restaurant production rather than home baking. With unusual proportions of butter, oil and honey in the batter, yeast for rising and more oil for frying, making the cookies would be rather daunting were it not for the fact that they help glorify a particularly holy celebration." 1. In a food processor process all the ingredients,
except the honey, into a paste. 2. Take a walnut-sized piece of paste and roll it out
very thin. Using a metal cut-out typically found in Morocco, with different designs, cut out cookies and let them rise for 15 minutes. Deep-fry the cookies in the remaining quart of oil in batches over low heat just to brown. 3. Soak the cookies in the honey for 15 minutes.

Moroccan Halwa, Chebakia or Mkharka
Moroccan Halwa, Chebakia or Mkharka are all names for these wonderful traditional Moroccan cookies. Roasted sesame seeds are incorporated in a flower shaped dough, fried then drenched in honey. Usually served with Harira during the holy month of Ramadan and special occasions.

Ingredients
▢1 Tablespoon orange blossom water
▢A pinch of saffron
▢1/4 cup sesame seeds (30g) toasted
▢2 cups all purpose flour (250g)
▢1/4 cup almond meal (20g)
▢1/2 teaspoon baking powder 2g
▢A pinch of salt
▢1/2 teaspoon ground anise.
▢1/2 teaspoon ground fennel.
▢1/2 teaspoon ground cinnamon.
▢1/4 cup melted unsalted butter
▢1 Tablespoon olive oil
▢3 Tablespoons oil vegetable/corn or sunflower
▢1 egg yolk
▢2 teaspoons white vinegar
▢Warm Water depends on your dough.
▢Oil for frying
▢1 to 1 1/2 cup honey.
Instructions
Pour orange blossom water in a small bowl. Rub saffron threads with your fingers to grind them a bit then sprinkle them on top of the bowl and let it bloom.
In a small food processor grind the sesame seeds until the grains become moist and easy to pack. Do not overdo it or the sesame seeds will turn into paste.
In a deep bowl, or your mixer bowl, sift flour, almond meal, ground sesame.
Add salt, baking powder, fennel, anise and cinnamon.
Pour melted butter and oil and start kneading with your hands or using your mixer.
When the flour is moist all over, add the egg yolk, vinegar, and saffron with its water then mix.
Gradually add water and knead until you get a soft consistent dough. Take it out to your working surface and knead by hand for a few minutes.
Cover with plastic wrap and let the dough rest for just 10 minutes.
Divide the dough into 4 parts, take one part to your working surface covering the rest with plastic wrap.
Lightly flour your work surface if necessary and roll out the first part into a rectangle of about 3mm thickness.
Fold one of the short ends of your rectangle into the middle, then do the other side until the edges touch. Fold to form a long rectangle of four layers.
Roll with your rolling pin as thin as humanely possible.
Using a fluted pastry cutter cut the edges to form a uniform rectangle about 42-45cm (17-18 inches ) length.
Cut the rectangle into strips of about 2cm (3/4 inch) wide.
Using a small cup, take one strip and roll it around the cup base. We aim to roll it two and a half times around the cup base.
Take the cup out and pinch the sides to shape it into an eye shaped pastry.
With a knife separate the middle strip.
Place the Chebakia on a baking sheet and cover with plastic wrap until you are done with the whole dough.
Deep Fry:
Heat oil on medium heat when oil is ready reduce heat a notch.
Hold the Chebakia by its ends pressing them to make sure they are glues together then put in the oil. Do not overcrowd the pan.
Fry until lightly browned on both sides.
Pour honey into a wide bowl
Take the Chebakia out and place them in the honey carefully, they should sizzle.
Wait for a minute then turn the Chebakia to the other side. Let them be for another minute then take them out into a strainer placed over a bowl to drip excess honey.
Let them cool completely then garnish with more sesame seeds.

recette de chebbakia ou griwech (selon les régions), un incontournable pendant le mois du ramadan, on la trouve obligatoirement sur chaque table marocaine pendant ce mois sacré.
Elle est à base de graines de sésame et de miel, parfumée délicatement de cannelle et fleur d’oranger… des parfums qui font rêver et qui annoncent l'approche du ramadan.
La chebakia se prépare en général en famille et en grande quantité, et elle se conserve pendant plusieurs semaines dans une boite hermétique.
Voici les ingrédients pour 2 kg un peu près de chebakia .
800 g farine
100 g poudre d'amande
100 g poudre de sésame
1 c à c fenouil en poudre ( vous pouvez le remplacer par l'anis )
80 g beurre noisette
60 g huile végétale
un peu de sel
1/2 c à c levure chimique
1 c à c cannelle
un jaune d' œuf
1 c à s vinaigre
100 ml l'eau de fleur d'oranger
+ ou - de 200 ml d'eau
huile végétale
1,5 kg miel
sésame pour décorer

Les ingrédients
500g farine du blé tendre de bonne qualitée
100g graines de sésames moulus
50g graines d'amandes moulus
1càs d'anis moulus
pc de cannelle
Demi Pc gomme d'arabique mixer avec le sucre
Pincée de sel
4g levure chimique
un pointe de levure boulangère

Moroccan Chebakia is a special recipe made in Ramadan and other special occasions. It is shaped as a flower, fried, and then coated with honey and sesame seeds. ????????
This recipe is a little time consuming, which is why most Moroccan women help each other make it together. This make the process much faster, but you can still do it by yourself too.????????????????????
My kids helped me make these sweets, so I was able to finish it more quickly. ????????????
It is very tasty! My family and I love it sooo much.

Ingredients:
- 6 cups of white flour
- Half a cup of sesame seed
- Half a cup of almonds
- 1 spoon of fennel
- Half a spoon of cinnamon
- Half a spoon of suger
- A little bit of salt
- Saffron or turmeric
- A small spoon of baking powder
- Half a cup of vegetable oil
- Half a cup of olive oil
- Half a cup of blossom water
- Water (as needed)
