Chocolate Guinness Cake...Most Requested Birthday Cake, also perfect for St. Patrick's Day
How can the most delicious chocolate cake be the easiest cake to make? Watch and find out how you can make this most requested and beloved cake in just one pot! No stand mixer needed!
Ingredients: (US measurements)
(for the cake)
1 cup (8 ounces) Guinness extra stout
10 tablespoons (5 ounces) unsalted butter
2 cups (400 grams) superfine sugar
3/4 cup (3 ounces) unsweetened cocoa, preferably Valrhona
3/4 cup (6 ounces) sour cream
2 large eggs
1 tablespoon pure vanilla extract
2 cups all-purpose flour, preferably King Arthur Flour Organic All-Purpose
2-1/2 teaspoons baking soda
(for the topping)
1-1/4 cups confectioners' sugar
8 ounces cream cheese, at room temperature
1/2 cup heavy cream
Ingredients: (Metric measurements)
(for the cake)
240 ml Guinness stout
150 grams unsalted butter
400 grams superfine sugar
85 grams unsweetened cocoa, preferably Valrhona
180 grams sour cream
2 large eggs
15 ml pure vanilla extract
250 grams all-purpose flour, preferably King Arthur Flour Organic All-Purpose
12 grams baking soda
(for the topping)
150 grams confectioners' sugar
226 grams cream cheese, at room temperature
116 grams heavy cream
Instructions:
Preheat oven to 350˚F (176˚C).
In a 4-quart saucepan, heat Guinness and butter, until butter has melted.
Sift in sugar and cocoa and whisk to blend. Set the mixture aside to cool.
Beat the sour cream, eggs and vanilla; mix well. Add to cooled Guinness/butter mixture.
Sift in the flour and baking soda. Whisk the ingredients until completely blended.
Pour into a buttered and parchment-lined 9-inch springform pan and bake for 50 to 60 minutes. (If using two 7-inch inch springform pans, bake for 40 minutes). Tip: it's better to slightly underbake this cake.
For the topping, using a hand mixer, sift the confectioners' sugar over the cream cheese and blend until smooth. Add heavy cream and mix until smooth. Top the cake after it has completely cooled.

How to Make Chocolate Guinness Cake
Vegan Chocolate Guinness Cake; rich dark (but light) chocolate cake made with Guinness and topped with a fluffy vanilla frosting.

To make this Vegan Chocolate Guinness Cake, simply follow the recipe below:
~ INGREDIENTS ~
For the Vegan Chocolate Guinness Cake:
- 200g (1 cup, not packed) soft brown sugar
- 170g (1 ⅓ cups) self-raising flour
- 60g (⅓ cup + 1 tbsp) cocoa powder
- ½ tsp baking powder
- Pinch of salt
- 250ml (1 cup) Guinness or another vegan stout or porter
- 110ml (½ cup) any vegetable oil (I used rapeseed oil)
- 50ml (¼ cup) non-dairy milk
- 1 shot of espresso (or 1 tsp instant coffee granules mixed with 1 tbsp hot water)
- 2 tsp vanilla extract
For the vanilla buttercream frosting:
- 150g (10 tbsp) vegan butter or margarine
- 400g (2 cups) icing sugar
- 1 tsp vanilla extract
~ METHOD ~
For the Vegan Chocolate Guinness Cake:
1) Preheat your oven - 180°C / 160°C fan / 350°F / gas mark 4.
2) Grease and line EITHER a 9-inch springform cake tin OR two 6-inch loose-bottom cake tins.
3) Measure the sugar, flour, cocoa, baking powder and salt into a large bowl and stir together to combine.
4) In a separate jug, whisk together the stout, oil, milk, espresso and vanilla until combined.
5) Pour the wet ingredients into the dry ingredients and whisk together gently until just fully incorporated.
6) Pour the cake mixture into the prepared tin(s) and bake in the preheated oven for 30-40 minutes until firm to touch and a skewer inserted into the middle comes out clean.
7) Allow the cake(s) to cool completely in the tin while you make the glaze.
For the vanilla buttercream frosting:
1) Beat the vegan butter/margarine until soft.
2) Add in half the icing sugar and beat until smooth.
3) Add in the remaining icing sugar with the vanilla and beat until smooth and pale.
4) Slather the mixture over the top of the cooled cake(s).
5) Slice up and enjoy!
BE A MAVERICK: you can make this into 1 larger 9inch cake or 2 smaller 6inch cakes!
If you don't follow a vegan diet or don't mind this cake not being vegan-friendly, feel free to use proper dairy products, it will be just as delicious!
This Vegan Chocolate Stout Cake will keep well in an airtight container or on a covered-cake stand for up to 3 days. No need to refrigerate.

• Cook Time: 45 mins.
• Total Time: 1 hour.
*Servings:*
• 1 cake of 10 slices.
*Ingredients:*
_For the Guinness Chocolate Cake:_
• 1¼ cup (275g/9½ oz) Melted Butter.
• ¾ cup + 1 tbsp (200ml/6.76 floz) Guinness Stout.
• ¾ cup + 2 tbsp (175g/6oz ) Brown Sugar.
• ¾ cup + 2 tbsp (175g/6oz) Caster Sugar.
• ½ cup + 1 tbsp (65g/2oz) Cocoa Powder.
• ½ cup (150ml/5.07fl oz) Sour Cream.
• 3 Medium Eggs.
• 1½ tsp Vanilla Extract.
• 1½ cups + 3 tbsp (275g/9½ oz) Plain/All Purpose Flour.
• 2 tsp Bicarbonate of Soda/Baking Soda.
• Pinch of Salt.
_For The Cream Cheese topping:_
• 1¼ cup + 1 tbsp (300g/10 ½oz) Full Fat Cream Cheese
• 1 cup + 3 tbsp (175g/7oz) Icing Sugar.
• 1 tsp Vanilla Extract.
• ¼ cup + 3 tbsp (100ml/3.38 floz) Double Cream.
_Serve with:_
• Ice Cream
• Whipped Cream
*Method:*
1. Preheat the oven to the following temperatures.
• 160°C/320°F [Fan Oven]
• 180°C/360°F [No-Fan]
• Gas Mark 4.
2. Line the base and sides of an 8 inch round loose-bottom cake tin.
3. For the chocolate Guinness cake: In a large bowl mix together the melted butter, Guinness, brown & white sugar and cocoa powder.
4. Add in the sour cream, vanilla extract and whisked eggs and mix until fully combined.
5. Sieve in the plain/all-purpose flour, bicarbonate of soda and salt and fold into the mixture.
6. Pour into a lined 8-inch round tin and bake in a preheated oven for 45 minutes or until a knife inserted into the middle of the cake comes out clean.
7. When baked, allow it to cool for 15 minutes in the tin before cooling completely on a wire rack.
_For the cream cheese topping._
1. Mix together full-fat cream cheese and icing sugar until soft.
2. Add in the vanilla extract and cream and mix until thick.
3. Spoon the cream cheese topping on top of the cake and speak it right out to the edges.
4. Refrigerate until ready to serve.
