*Ingredients*
-3 Pound Pack of 80/20 Ground Beef
-Brioche Buns
-Your Favorite All Purpose Seasoning (Grilla AP or Mississippi Grit)
-Your Favorite Beef Rub
-Fresh Rosemary
-Fresh Garlic
-Butter
-Prepared Horseradish
-Mayo
-Sour Cream
-Chives
-Apple Cider Vinegar
-Provolone Cheese
-Mushrooms
-Diced Onions

First thing we need to do is get the Silverbac fired up to 275. This temp will cook the burgers slow enough to really take on some great flavor throughout the cook process.
For the burgers, pat out 4 burgers from the 3 pound pack of ground beef. They should weigh in at the 3/4 pound mark. Get them seasoned with the All Purpose and Beef Rub.
Next, place the mushroom and onions in a foil pan. Get the butter, garlic, and rosemary in a grill safe dish as well. Place both items on the pit and get those flavors working. The sooner you can get the garlic and rosemary butter cooking, the more flavor you can get on the burgers.
After a few minutes its time to get the burgers on the pit. I placed them on the top rack to help cook more evenly since we are not going to flip these burgers at all. I placed a probe in one of the burgers to monitor the internal. We will be cooking these to an internal of 145 ish for the perfect medium.
Now it's time to bring on the flavor! About every 15 minutes I baste the burgers with the butter that has infused all the flavors of the garlic and rosemary. This is where all those great prime rib flavors set this apart from any other burger!
Between one of the basting process's is a great time to make up the horseradish mayo. To make this, combine the ingredients below and place in the fridge until ready to serve.
**Horseradish Mayo***
-1/2 Cup Mayo
-2 Tablespoons Sour Cream
-3 Tablespoons of Drained Prepared Horseradish
-1 Teaspoon of Apple Cider Vinegar
-1 Tablespoon of Chopped Chives
Once the burgers get close to the 145 internal temp, top them with the onion and mushrooms, followed by a couple of slices of provolone cheese. By now you have infused all the great flavors of a prime rib into a burger.
To build the burger, all you need is to put that beautiful burger between two soft brioche buns slathered with the horseradish mayo! Get ready! This ain't your daddy's burger!

INGREDIENTS
For the burgers:
- 2 lb ground pork
- 1 1/2 tsp kosher salt
- 1 tsp onion powder
- 1 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1 tbsp yellow miso (mild)
- 1 large egg yolk
- 1 tbsp neutral oil
For the sauce:
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 tsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp fresh dill, minced
- 1 tbsp fresh parsley, minced
INSTRUCTIONS
For the burgers:
- Have a parchment-lined baking sheet prepared and set aside.
- In a large bowl, combine the ground pork, salt, onion powder, garlic powder, black pepper, miso, and egg yolk. Mix until the meat and seasonings are well combined.
- Use a scale or by eye to portion the meat mixture into 8 equal balls. Flatten each one into a patty approximately 3 inches wide. If needed, use a 3-inch biscuit cutter as a guide. Drizzle the patties with the oil and sprinkle with salt.
- Heat the grill on high for 15 minutes, and reduce to medium-high. Grill the patties until they are browned and reach 160°F, 4-5 minutes per side. Once grilled, remove the patties from the heat and serve with the sauce.
For the sauce:
- In a bowl, combine the mayonnaise, Greek yogurt, Worcestershire sauce, Dijon mustard, garlic, salt, black pepper, dill, and parsley. Whisk until smooth and store in the refrigerator until serving. This can be made two days in advance.

Ingredients
8 ounces chuck, trimmed, cut into 1 1/2-inch cubes
8 ounces sirloin, trimmed, cut into 1 1/2-inch cubes
1/2 teaspoon kosher salt
Directions
In separate batches, pulse the chuck and the sirloin in a food processor 10 times. Combine the chuck, sirloin, and kosher salt in a large bowl. Form the meat into 5-ounce patties.
Heat a cast iron skillet or griddle over medium-high heat for 2 to 3 minutes. Place the hamburger patties in the pan. For medium-rare burgers, cook the patties for 4 minutes on each side. For medium burgers, cook the patties for 5 minutes on each side. Flip the burgers only once during cooking.
