Recipe
Ingredients pork
- 1 pork leg, shoulder or butt
- 3 limes, zest and juice
- 2 oranges, zest and juice
- 1 tbsp cumin
- 1 tbsp oregano
- 3 heads garlic
- 1 tbsp salt
Method
1. For the marinade for the pork, either blend everything in a blender or use a mortar and pestle as i have here.
2. Take your pork and score the flesh side of it and season with salt.
3. Place into a large dutch oven, pouring on half of the marinade, massaging in, flipping the pork over and repeating on the other side.
4. Place this in the fridge to marinate for at least 6 hours but preferably overnight.
5. The next day, preheat the oven to 125**°**c or 250**°**f and cook the pork for 6-7 hours or until fork-tender. Once the pork is cooked, remove it from the pot and set aside to rest.
6. While it’s resting, reduce the leftover marinade in the pot to a thick consistency but just make sure you check it every few minutes that it’s not too salty.
7. Remove the skin from the pork and using 2 forks, shred the meat. Stir through the reduced marinade once the pork is shredded.

- Pulled pork
- Baguette (or cuban bread if you can get your hands on some)
- Sliced ham
- Swiss cheese
- Sour pickles
- Yellow mustard
- Butter
Method
1. Start by cutting your baguette in half, butter it and toast this in a pan over medium high heat.
2. To assemble your sandwich, start with a layer of mustard, followed by a layer or pulled pork, and next a layer of warmed ham, pickles and finally cheese.
3. Toast this on both sides with butter in the same pan over medium-high heat. Enjoy!
Grilled Cuban Sandwich
How many times have you seen a cuban sandwich in movies or documentaries and salivated over its slices of bread? Today we turn on our grill to prepare the authentic cuban sandwich.

INGREDIENTS
- 600 g Pork loin
- Olive oil
- 1 Orange
- 1 Lime
- ½ Teaspoon of cumin
- ½ Teaspoon of oregano
- Salt
- Pepper
- Fresh parsley
- Fresh coriander
- 1 Loaf of Cuban bread
- Mustard
- Slices of Swiss cheese
- Glazed cooked ham slices
- Sliced gherkins
- 50 g Melted butter

DIRECTIONS
1. Marinate the pork loin in a mix of oil, orange juice, lime, cumin, oregano, salt, and pepper for two hours at least and up to 12 hours.
2. Place it on an oven tray and bake at 200° C for 40 minutes, or until the temperature inside the meat reaches 55-60° C. Let it rest for five minutes and cut into thin slices.
3. Cut the loaf of bread into pieces for the sandwiches and spread mustard on both slices. Assemble the sandwiches by layering two slices of cheese on the bottom, ham to taste, sliced loin, and gherkins. Place the second slice of bread on top.
4. Spread melted butter on both sides of the sandwich and cook on sandwich mode for five minutes, or until the bread looks golden brown and the cheese melts.

Authentic Cuban Sandwich Recipe | El Cubano | Cuban Pork Sandwich Recipe
A Cuban sandwich is a combination of roasted pork, ham, and cheese that originated among the Cuban workers in the cigar factories in Key West, Florida as early as 1831. I tried to keep the flavors authentic & cooked it up on the Lone Star Grillz offset vertical Smoker.

2 cups bitter orange juice
1/4 cup chopped garlic
2 tablespoons cumin
2 tablespoons dried oregano
1 1/2 tablespoons ground black pepper
Mix well and pour over pork
