Food City Friday: Grilled Chicken with Fruit Salsa
Chef Jimmie Jones from Food City shows us some ideas for your July 4th family cookout.
Grilled Chicken with Peach Salsa
Ingredients:
3 or 4 boneless, skinless chicken breasts or boneless skinless thighs
2 tbsp. white balsamic vinegar
2 tbsp. olive oil
2 tbsp. honey
1/8 tsp. salt
1/8 tsp. pepper
For the salsa:
2 tbsp. white Balsamic Vinegar
1/4 cup olive oil
1 medium tomato, cored and diced
3 tbsp. chopped fresh cilantro
½ tsp. salt
½ tsp. black pepper
1 or 2 ripe peaches, diced
1/4 of a red onion, diced
1 jalapeno pepper, diced
1 lime, juiced
In a bowl, mix together a 2 tablespoons of Honey, 2 tablespoons balsamic vinegar, 2 tablespoons olive oil, 1/8 tsp salt, and 1/8 tsp pepper. Mix well, drop in the chicken and toss in the marinade to coat. Place in the refrigerator overnight or at least 4-6 hours.
In a medium mixing bowl, whisk together balsamic vinegar, olive oil, peach preserves or jelly, salt, black pepper. Add the sliced nectarines, onion, tomato, jalapeno, and cilantro. Add the juice of one lime and toss to combine. Let marinade refrigerated for an hour to marry the flavors.
Grill the chicken over medium high heat until done. Top with Salsa.
Worcestershire Butter Sauce
Ingredients:
1/2 cup butter or margarine
1 tbsp. fresh parsley, chopped
1 tbsp. minced garlic
2 tbsp. lemon juice
1-1/2 tsp. Worcestershire sauce
1/8 tsp. salt
Melt the butter in a small saucepan and then add the remaining ingredients. Heat thoroughly and serve over fish or vegetables.
Grilled Stuffed Squash
Ingredients:
3-4 small yellow crookneck squash
3/4 cup Farmstand Black Bean and Corn Salsa
6-8 slices of Dietz and Watson Jack Cheese with Cayenne
Cut the squash in half. Scoop out the seeds leaving a cavity. Salt both sides of the squash, this will let it release water and soften. Grill both sides for about 2-3 minutes per side. Spoon in salsa in cavity of squash and cover with a slice of cheese. Grill until melted and heated through.
Cooking and Quarantine: Chipotle Chicken and Fruit Salsa

Chipotle chicken and Fruit Salsa
2lbs chicken (I like skinless boneless thighs but boneless breast are good too)
Marinade
1 clove garlic
1/2 can chipotle in can with adobo
1/2 bunch of cilantro
2T lime juice
1t cumin
1t smoked paprika
2T oil
Salt and pepper
Place all ingredients in a blender and blend till smooth.
Place chicken and marinade in a bowl to marinade I like over night to get good flavor
To cook you can put in slow cooker for 4-5 hours or grill.
When cooked if in slow cooker shred chicken if grilled slice up chicken.
Fruit salsa (Cheat version)
1 jar good jar of salsa
1 c of fruit( strawberries, mango, pineapple) chopped
1/2 bunch cilantro chopper
1 jalapeño if you want it spicier, chopped
1 squeeze lime
Put salsa in bowl and mix all together
GRILLED GINGER CHICKEN WITH MANGO SALSA | LOW CALORIES | WHAT I EAT TO LOSE WEIGHT
Here is another great low calorie, healthy chicken recipe. GRILLED GINGER CHICKEN WITH MANGO SALSA is very easy to make and super delicious! Although the original WW recipe calls for Peach Salsa, I used Mangos since they are in season. Here is my version of this very easy and tasty recipe.
RECIPE:
Ingredients:
For Marinade:
10-12 oz boneless, skinless chicken breast sliced into two cutlets
2 teaspoon of grated/minced fresh ginger
1-2 garlic cloves chopped fine
2 teaspoons olive oil
Take the chicken cutlets and place in bowl with marinade ingredients and let sit for 15-30 minutes before grilling.
For Salsa:
1 cup of chopped mangos (or peaches, pineapple, whatever fresh fruit is in season)
1/4 cup of chopped red onions
1/2 jalapeno pepper seeded and minced
1/4 cup of chopped sweet red bell peppers
1 cup of fresh cilantro leaves chopped (if you don't like cilantro use fresh parsley or basil)
2 tablespoon of fresh lime juice (or bottled)
Instructions:
Combine the chicken and marinade ingredients in a bowl and mix together until chicken is well coated. Cover with plastic wrap and set aside for 15-30 minutes.
Meanwhile, to make the salsa, chopped the mangos and add the salsa ingredients. Mix well together and sit aside while cooking the chicken.
Set grill. Place chicken breast on grill and cook until done.
Plate: Place the grilled chicken breast on the plate and top with the mango salsa.
I served the chicken with brown rice and steamed brocolli.

1/2 cup brown rice - approx 109 calories

Chicken Breast with Mango and Bell Pepper Salsa

What if before frying the chicken breast, you coated it with a hot and spicy mango and bell pepper mixture? Imagine the flavors to come out of such a thing. Then enrich this sauce even more by adding spring onion and sweet chili sauce. Serve the meat and the sauce garnished with some salad and parmesan for some contrast in flavor and texture.
