How To make Grilled Swordfish with Citrus Salsa
2 6 ounce swordfish steaks
1 ts Creole spice
3 6 inch corn tortillas,-cut
: -into 1" thick strips : Salt and pepper 1/4 c orange sections,
zested
: before cut 2 TB lemon sections, :
zested
: before cut 2 TB lime sections, zested
: before cut 1 TB shallots :
minced
1 TB olive oil
1 ts honey
1 TB cilantro chopped
Preheat the grill and the fryer. Season the fish with the spice. Place on the grill. Fry the tortilla strips in the fryer for 3 minutes, drain and season with salt and pepper. (You want the strips to be sort of crumbled up as they fry, they will be the nest for the fish to sit on.) In a small bowl, combine the sections, shallots, zest, olive oil, honey, and cilantro. Season with salt and pepper. Remove the fish from the grill. Set up a nest with the tortilla strips and place the fish on top. Top with the salsa. Recipe By : ESSENCE OF EMERIL SHOW Date: 09/26/96 :

LEMON BUTTER SAUCE / TIPS TO PREVENT SPLIT / SAUCES RECIPE
Learn how to make lemon butter sauce! This lemon butter sauce is delicious served with seafood like salmon ,prawns or chicken.

Grilled Swordfish
A delicious and light spring meal. Be sure to try this tasty recipe of Grilled Swordfish with Spring Vegetables and a side of Fresh Berries with Heinen's Aged Balsamic.
INGREDIENTS
SPRING VEGETABLES:
8 peeled and sliced baby carrots
1/3 pound of trimmed green beans
20 asparagus stalks cut in half
15 radishes sliced in half
6 green onions sliced long ways
1 head of trimmed cauliflower
2 pounds of sliced fingerling potatoes
20 peeled Cippolini onions
1 cup of baby Spring peas
5 tablespoons of olive oil
4 slices of julienne prosciutto ham
1/2 small diced shallot
1/3 cup of chopped fresh dill
Zest of 1 lemon
Juice of 1 lemon
2 ounces of unsalted butter
Kosher salt and fresh cracked pepper to taste
BERRIES:
Assorted fresh berries
Aged balsamic vinegar
SWORDFISH:
Two 10 ounce fillets of fresh swordfish
2 tablespoons of olive oil
Kosher salt and fresh cracked pepper to taste
PREPARATION
SPRING VEGETABLES:
In a large bowl mix together 2 tablespoons of olive oil, fingerling potatoes, Cippolini onions, salt and pepper and place on a sheet pan lined with parchment paper and roast in the oven on 375°F for 15 to 20 minutes or until golden brown.
In a large hot sauté pan with tablespoons of olive oil caramelize all of the remaining vegetables except for the peas. While the vegetables are browning place a separate sauté pan on the burner with 1 tablespoon of olive oil on high heat and crisp up the prosciutto ham. Once crispy add in the shallot to caramelize. Once the shallots are brown remove the pan from the heat and whisk in butter, dill, lemon zest and lemon juice.
Once the potatoes and vegetables are done roasting, combine them and add in the herb lemon butter along with the peas, adjust the seasonings with salt and pepper and keep warm.
FISH:
Coat the swordfish with the olive oil, season with salt and pepper and place on a hot grill (400° to 500°) for 6 minutes on each side or until golden brown and cooked through out. Once cooked remove from the grill.
BERRIES:
In a small bowl toss together fresh berries and desired amount of balsamic vinegar
TO PLATE:
Lay down the roasted vegetables with the swordfish on top.
