How To make Grilled Chicken a L'Orange
***MARINADE*** 1 medium orange
zest of
1 medium orange :
(about 1/3 c.) ,
juice of 1 teaspoon dry mustard
tiny pinch of cumin :
optional 2 tablespoons red wine vinegar
1/3 cup olive oil
4 boneless skinless chicken breast halves
***SAUCE*** 2 tablespoons butter
2 tablespoons flour
1 1/2 tablespoons sugar
1/4 teaspoon cinnamon
1/4 teaspoon dry mustard
2 tablespoons red wine vinegar
1 1/2 cups orange juice
In a 9x13 dish make the marinade by combining the zest, juice, mustard, cumin, if using, and vinegar. Spread out a sheet of plastic wrap about 2 feet long and place chicken breasts on it. Spread another sheet of plastic wrap over the chicken breasts. With flat side of a mallet, pound the chicken to an even 1/2- inch thickness. Remove plastic wrap and place chicken in marinade. Cover and allow to marinate 30 min. to 1 hour. When you are ready to cook the chicken, preheat the grill. Then prepare the sauce. In a wide skillet, melt the butter over low heat and stir in the flour. Cook this roux over low heat for a minute or two, until it bubbles. Add the sugar, cinnamon, mustard, and vinegar and stir until well combined. Whisk in the orange juice, bring the heat up to medium, and stir until thickened. Lower the heat and cover the pan to keep the sauce hot while you grill the chicken. Grill the chicken just until cooked through, 3 to 5 minutes per side. Do not overcook the chicken. When serving, place the grilled chicken on a heated platter, pour some of the sauce over it, and pass the rest of the sauce. Serves 4.

1 whole 5-lb (or larger) chicken
1 24-oz jar orange marmalade
1 TB fresh ginger
2 TB red pepper flakes
¼ C Grilla AP Rub
3 TB Grilla BBQ Sauce

If you want to save cook time, you may want to start by spatch-cocking the chicken. This will cut about 20 percent off of the cook time. If you prefer the presentation of a whole bird leave whole. Preheat your Grilla to 275 degrees.
In a small sauce pan, melt the orange marmalade on low. Add the BBQ sauce and ginger to this mixture.
Coat the chicken with the rub and place on the grill. If you spatch cooked the bird, start with the skin-side up for cooking. Flip the bird over halfway through cooking. If you left it whole, then you will cook breast-side up for the whole cook.
Your cooking time will vary depending on size of bird, but you want to cook until all parts of the bird reach an internal temp of 165 degrees. If you plan on pulling the meat apart then you want to take the temp to at least 175 degrees. Your total cook time for a whole bird will be just over 2 hours.
During the last 20 minutes of cooking, coat the bird with the marmalade mixture in 10-minute intervals. If you have some leftover, that is fine—it’s great to dip the meat into if you pull the meat from the bird.

Orange Honey Glazed Chicken
INGREDIENTS:
4 chicken Leg quarters, cleaned then pricked all over UNDER THE SKIN
1/4 cup orange juice
2 tbsp rice vinegar
2 tbsps Olive oil
3 tsps finely grated ginger
3 cloves garlic, minced
2 tsps orange zest
3 tbsps soy sauce
2 1/2 tbsp Jamaica Valley Chicken seasoning (loved it for this recipe especially because of the colour...orange) ????
1 tsp Ginger powder
1 1/2 tsp coriander powder
Salt and pepper to taste
2 tbsps Brown sugar
1 tbsp minced fresh herbs (sage, rosemary, thyme)
1 tsp Browning (more or less)
Glaze:
1/4 cup orange juice
2 tbsps rice vinegar (added off cam)
1/4 cup honey
2 tbsps soy sauce
2 tbsp brown sugar
Orange slices and fresh parsley for garnish

Depending on how large the leg quarters are and baking at 400F, you could do cooking time of
1. 30 minutes
then glaze and do another 30
or
2. 45 minutes
then another 40
If you own a meat thermometer it is easy to check the thickest part of the thigh for doneness. (about 165F)
