How To make Grilled Beef Tenderloin w/ Chipotle Sauce & Menonita Cheese
12 ounces Cacique brand Menonita cheese
6 8 oz. beef tenderloin steaks
3 tablespoons butter
Cacique brand Cotija cheese cilantro
chopped ***Chipotle Sauce*** 3 medium onions :
sliced 1/2" thick
3 tablespoons garlic minced
2 teaspoons dried oregano
2 cups cilantro :
chopped
15 Roma tomatoes
3 limes juice of
5 Chipotle chilies in adobo :
canned
salt and pepper -- to taste
Grill the tenderloins over a white ash fire, to desired doneness. For best resu lts the BBQ should be covered or closed, to act as an oven. Heat the sauce thro ugh and whisk in the butter. Melt the Menonita cheese. Place meat on serving tr ay and pour cheese over the top of the meat. Sprinkle with Cotija, and garnish with the cilantro.
Chipotle Sauce: Toss the tomatoes in vegetable oil and preferably grill the onions, and the tom atoes, over Mesquite coals. The tomatoes should have blistered skins (if not gr illing, blister tomatoes skins in a very hot skillet and then add the onions wi th some vegetable oil to a hot sauce pan). Add garlic and continue to cook for about 2 minutes. Add the oregano, cilantro, and the chilies, which have been ri nsed and cleaned of their veins, and seeds and cook slowly, covered, for about 20 minutes. Let cool and then puree in the blender, adding the lime juice and s alt and pepper to taste. For spicier sauce, add some of the adobo from the cann ed chilies.

My white Dutch oven :
CHICKEN:
MARINADE IN ITALIAN DRESSING FOR SEVERAL HOURS OR OVERNIGHT. THEN GRILL
POTATOES:
Quarter and cook potatoes just until soft
Cheese Sauce:
2 T butter melted
2 T flour
mix in a saucepan and then add milk 1/2 cup at a time. stir until there are no lumps. add spices to taste. Add cheese of choice until melted!
M&M Bars
2 c. oatmeal
1 c. brown sugar
1 1/2 c. flour
1 c. butter, melted
1 t. soda
1/2 t. salt
1 can sweetened condensed milk
1/3 c. peanut butter
1 c. m&ms
1 c. chocolate chips
mix oatmeal, sugar, flour, butter, soda, and salt. mixture will be crumbly. reserve 1 1/2 cup crumbs. Press the remaining crumbs in a 9x13 pan. Bake at 350 F for about 12-13min. Meanwhile combine milk and peanut butter. After crust is baked, spread the milk mixture over the crust. then sprinkle with choc. chips & M&Ms. sprinkle some of the remaining crumbs on top. I don't use all the crumbs because I feel like it's too dry if I do. Bake for 18 min or so. DO NOT OVERBAKE. It's better if it's slightly under baked. ENJOY!!

CROCKtober Extravaganza 2021 - Al Pastor Pork Tacos ????
We are excited to be participating in the Crocktober Extravaganza Collaboration for 2021! Below is summary of the recipe, to help you along. You're going to love this one!
Meat:
3# port butt, shoulder, or pork steaks. Sliced to about 1 thick. The marinade will make enough for 2-3x times that much meat if you'd like to increase the volume.
Marinade:
3/4 of a pineapple cubed
2oz package Ancho Chilis (rehydrate and remove seeds)
1 Can Chipotle Peppers (in Adobo Sauce)
3.5oz package of Annatto Paste
1 head of garlic (pealed)
1/2 C Orange Juice
1/3 C White Vinegar
1 Tbsp Ground Cumin
3 Tbsp Mexican Oregano
Place all in Crockpot. Leave meat sit in marinade for at least 4 hours, or overnight if you can. Cook on low 8-9 hours, or High for 4 hours. Remove meat from Crockpot, and optionally place under broiler to brown up the meat a little. Shred the meat a little place onto desired taco shells. Garnish with your choice of salsa, leftover pineapple chunks, chopped onion, and cilantro. A little fresh squeezed lime juice would also be wonderful. Thanks for watching ♥

Ingredients
2 to 3 cups shredded chicken
1 15oz can of mixed veggies
1 1/2 cups mayo
1/2 cup Mexican cream (crema memonita- like a slightly sweet sour cream)
1/2 chopped onion
2 Finley chopped celery stalks
Kernels of one corn on the cob
Juice of 1/2 lime
1/2 Tbsp black pepper
1 tsp salt
Service with Fried flour tortillas or crackers, one finely chopped iceberg lettuce, and chiles en escabeche
