LBEB Kitchen: Greek Lamburgers - LiftBigtEatBig.com
Greek food has a special place in my heart, and on today’s episode of LBEB Kitchen, I wanted to combine some of my favorite Greek flavors into a great burger for you. Part of what makes these lamburgers great is the feta cheese worked into the ground lamb, rather than just sprinkled on top. This lamburger is topped with some homemade tzatziki sauce and a lightly buttered and toasted brioche bun. Brioche buns are the best bun option for a burger (ciabatta bread is a travesty, keep it away from my burgers). Check out the recipe below, I know you’ll enjoy it.
Ingredients:
Brioche buns
1tbsp melted butter
1 cup whole milk Mediterranean plain yogurt
1 cucumber, peeled and de-seeded
2 sticks of fresh mint, stems removed
2 cloves garlic
1/2tsp fresh squeezed lemon juice
2lbs ground lamb
2 eggs
4oz feta cheese crumbles
salt and pepper
Directions:
Lightly rub melted butter on top of brioche bun, set aside.
Run cucumber and mint through a food processor, just enough to break down the larger pieces, make sure to leave a few pieces for some nice crunch later. Combine cucumber, mint, yogurt, garlic, and lemon in bowl. Stir until completely mixed, set aside in fridge.
In large bowl, combine lamb, eggs and feta until thoroughly mixed together. Make into balls and then flatten into patties. Cook on grill until desired doneness is achieved. Halfway through cooking the patties, place brioche buns on top rack of grill, inside face-down.
Remove from grill, top with 2tbsp of tzatziki sauce, and enjoy!
