How To make Gram's Lighter Applesauce Fruitcake
1 c Butter; room temperature
2 c Sugar
2 Eggs; room temperature
2 ts Vanilla
2 c Pitted dates; chopped coarse
3 c Applesauce
2 c Walnuts; chopped coarse
2 c Raisins
2 c Mixed candied fruit; chopped
-coarse 1/2 ts Salt
1 ts Ground cinnamon
1/2 ts Ground cloves
1 tb Baking soda
4 c All-purpose flour
Cream butter and sugar. Beat in eggs, one at a time. Add vanilla. Add remaining ingredients and blend until all is incorporated. Divide batter among 3 greased loaf pans, about 8 x 4 x 3-inches each. Bake in a preheated 350-degree oven for 1 hour and 15 minutes, or until a toothpick comes out
clean. Remove to a cooling rack. When cool enough to handle, remove the loaves from the pans and cool completely on a rack. Wrap in plastic wrap and keep in refrigerator. The Tampa Tribune, December 1992. -----

INGREDIENTS IN THIS DISH:
500g of Mixed Dried Fruit
1/2 Cup of Brandy (or similar liquor or orange juice)
150g of Butter
1/2 Cup of Brown Sugar
2 Eggs
1 1/2 Teaspoons of Mixed Spice
1 Teaspoon of Vanilla Extract
1/2 Cup of Cranberry Sauce (or Apple Sauce)
1/2 Cup of Plain Flour
1 1/2 Cups of Fresh Breadcrumbs
NOTE: You can make the pudding up to 1 day ahead. To reheat, turn pudding out onto a plate and microwave uncovered for 10 minutes on 30% power until warmed through.
Preparation Time: About 15 minutes
Cooking Time: About 45 minutes
SERVES 8

Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make Chocolate Marble Bread. Chocolate Marble Bread is eye catching with its beautiful swirls of white and chocolate cake. Although it may look complicated, it actually starts with a vanilla cake batter that has melted chocolate stirred into part of the batter. The marbling is created by placing spoonfuls of the white and chocolate batters in your pan, and then running a wooden skewer through the two batters. This Chocolate Marble Bread (cake) is so moist and flavorful that it really doesn't need a frosting.

Ingredients:-
Dry:-
Whole wheat flour- 1cup
Carrot grated- 1cup
Salt- 1/2tsp
Baking soda- 1/2tsp
Baking powder- 1tsp
Wet:-
Vegetable oil- 1/2 cup
Eggs- 2nos
Sugar- 3/4cup (180gms)
Vanilla extract- 1tsp
Process:-
Mix (sift) together all the dry ingredients (except carrots) and keep aside.
Whisk all the wet ingredients in a large mixing bowl until sugar melts. Add the dry ingredients mixture in batches. whisk it altogether (dry and wet).
Mix 1-2 cups grated carrots (according to your taste) with 2tbsp of wheat flour.
Now adding the carrots in batches, cut and fold the cake batter until smooth (or5-6mins) with the help of a spatula.
Pour the batter in a greased tin. Dab it for 3 times.
Bake the cake in a preheated oven (at180degrees) for 40-45 mins.
