GINGERBREAD MUFFIN
Preheat oven to 350 degree F
2 cups all-purpose flour
1 cup sugar
1 cup molasses
1 cup vegetable oil
2 eggs
1 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon ginger
2 teaspoons baking soda
1 cup boiling water
1. Dissolve baking soda with 2 tablespoons of hot water. Whisk, set aside.
2. In large mixing bowl add flour, sugar, cloves, ginger and cinnamon. Whisk until five ingredients are well combine. Set aside.
3. In medium mixing bowl add eggs (whisk), oil and molasses. Whisk well together. Add to dry ingredients and whisk well.
4. Add 1 cup boiling hot water to mixture. Whisk well. Batter will be thin.
5. Add batter (2/3 full) to each regular, greased and floured, muffin tins. Cupcake paper liner can be used.
6. Bake muffins in preheated oven for 25-30 minutes.
7. Cool and ENJOY!!
TIPS: Store muffins in airtight container up to 2 days. Freeze up to 3 months.

250g/3/4 cup black treacle/molasses
100g/1/2 cup dark brown sugar
130ml/9 tbsp buttermilk
130ml/9 tbsp milk at room temperature
2 medium eggs at room temperature
The zest of an orange
7.5g/1 1/2 tsp baking powder
A pinch of salt
10g/2 tsp cinnamon powder
10g/2 tsp ginger powder
2.5g/1/2 tsp nutmeg powder
2.5g/1/2 tsp clove powder
2.5g/1/2 tsp allspice powder
1.25g/1/4 tsp coriander powder
1.25g/1/4 tsp cardamom powder

Easy Gingerbread Muffins - Holiday Recipe
Got visions of dancing sugar plums? If so this must-make recipe is one to add to your holiday baking list! Ready in 30 minutes, our Gingerbread Muffins are sweetened with Nate’s pure honey and include our favorite seasonal flavors for an ultimate holiday treat. The entire house will smell delightful while these bake in your oven, and you can add a generous drizzle of Nate’s for extra sweetness.
Ingredients:
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
1 ½ tsps ground ginger
1 tsp ground allspice
½ tsp salt
¼ cup Nate’s 100% Pure Honey
¼ cup molasses
1 egg, at room temperature
1 tsp vanilla extract
1/3 cup plain greek yogurt
1/2 cup whole milk
1/4 cup coconut oil, melted
Directions:
Preheat the oven to 350℉. Line a muffin tin with liners, and spray with cooking spray. Set aside.
In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, allspice, and salt. Set aside. In another bowl, whisk together the honey, molasses, egg, vanilla extract, greek yogurt, whole milk, and coconut oil. Fold the wet ingredients into the dry until just combined.
Fill your muffin liners halfway full, then bake for 18-22 minutes, until they spring back when touched. Let cool, then drizzle with honey to serve.

Ingredients:
•2 ½ cups all purpose flour
•½ cup brown sugar
•⅔ tablespoon cinnamon
•½ teaspoon ginger
•½ teaspoon cloves
•¼ teaspoon salt
•1 ⅓ teaspoons baking powder
•½ teaspoon baking soda
•½ cup molasses
•1 stick melted, warm, unsalted butter
•½ cup room temperature milk
•⅔ tablespoon vanilla extract
•2 room temperature eggs
•4 tablespoons turbinado sugar
Directions:
•Place cupcake liners in muffin tins and set aside.
•Preheat an oven to 400 degrees.
•In a large bowl, whisk together the all purpose flour, brown sugar, cinnamon, ginger, cloves, salt, baking powder and baking soda until combined.
•In a separate bowl, whisk together the molasses, melted butter, room temperature milk, vanilla extract and room temperature eggs until combined.
•Pour the wet mixture into the dry mixture and whisk together until a batter forms.
•Scoop the batter into the cupcake liners in the muffin tins. Fill up each liner about half way.
•Sprinkle the turbinado sugar onto the muffin batter.
•Bake in a 400 degree oven for 8 minutes.
•Without removing the muffins from the oven, reduce the oven temperature to 350 degrees and bake for an additional 8-10 minutes.
•Let cool in the muffin pans for 10 minutes.
