Vegan Garlic Thyme Tortellini | One-Pan Sauce | Vegan Ricotta Cheese
Rich and delicious sauce AND a garlicky noodle? Count me in!
We've made noodles before, but lets take it to the next level with this creamy sauce made right in the pan! No dozens of dishes this time! Any using our vegan pasta dough from last week, we get fancy restaurant style dish right at home!
Ingredients:
2 servings Fresh Tortellini
Vegan Ricotta Cheese:
1/2 cup Cashews
1 block Extra Firm Tofu
2 tbsp Lemon Juice
1 tbsp Nutritional Yeast
1 tsp Salt
dash of Black Pepper
2 cloves Garlic
Garlic Thyme Sauce:
3 tbsp Vegan Butter (split into 2 and 1)
1 Shallot
3 cloves Garlic
1 tsp Salt
1 tsp Black Pepper
6 sprigs Fresh Thyme
1 cup Vegetable Broth

How To Make Baked Tortellini | Delish
The luxurious, homemade sauce will have you coming back for seconds and thirds.
DIRECTIONS
1. Preheat oven to 350 degrees F. Grease a medium casserole dish and set aside.
2. Heat 2 tablespoons olive oil in large pot over medium heat. Sauté onion until soft. Add the garlic and cook until fragrant, about 30 seconds. Add the beef and cook, stirring occasionally, until no longer pink. Pour in wine and use a wooden spoon to scrape any browned bits on bottom of pan. Add the tomato paste, crushed tomatoes, and oregano. Season with salt and pepper. Bring mixture to a simmer and cook until slightly reduced, about 10 minutes. Set aside.
3. Add tortellini to prepared baking dish. Pour the meat sauce on top and stir so that pasta is evenly coated. Top with grated mozzarella and sprinkle with Parmesan. Cover with foil and bake until the cheese is melted and the pasta is cooked through, 25 minutes.
4. Garnish with basil.

A creamy, rich, garlicky delight...well, the teen 'had to have' the 3-cheese tortellinis and wanted jarred alfredo sauce. Okay, so I took some chicken and we made dinner! After sauteeing up and removing the chicken, cooking down the red onions, then warming the garlic--it was roux time. It's patience that cooks down the flour with the butter and all the drippings, then the milk/cream and parm. It's dinner!

This garlic butter cream sauce is not the same as Alfredo sauce which is made with lots of parmesan cheese and is much thicker than this sauce. This sauce can also be made with whole milk instead of cream.

Easy Sauce Recipe for ravioli : Method
***************************************
Melt butter in a small saucepan over medium heat. Add onion and stir until translucent.
Add garlic and saute until fragrant, about 45 seconds. Add the cream, oregano, basil, salt and pepper, then bring to a simmer.
Continue cooking, stirring constantly, until thick, about 8 minutes.
Meanwhile boil the ravioli according to the package instructions.
Once done drain and add the ravioli to the sauce along with the baby spinach
