16 ounces white beans
drained and rinsed 2 tablespoons extra virgin olive oil minced clove of garlic water or chicken broth 8 ounces peeled shrimp :
deveined --and cut into 1/2-inch pieces --weighed after peeling 1/4 cup chopped fresh parsley or basil salt and crushed red pepper flakes Simmer beans, olive oil and garlic for 10 minutes. Add some water or chicken stock to make the mixture soupier. Add shrimp, cover and simmer 5 minutes or until shrimp turns pink. Add parsley and season well to taste with salt and crushed red pepper. Ingredient: * 6-8 pcs Long Bean * White Rice * 2 pcs Chinese Sausage * Garlic * 3 nos Egg * 2 tbsp Oyster Sauce * 2 tbsp Light Soy Sauce * 1 tbsp Olive Oil * Dash of Pepper * Chicken Floss(optional)
Steps: * Clean, wash and cut all ingredients to small size. * In a medium heat of wok, sautéed the garlic till fragrant. Add in Chinese Sausage and the long bean. Stir fry and mixed well. * Then, add in the light soy sauce and the oyster sauce. Follow by the white rice. Stir well. * Crack the eggs in the bowl with dash of pepper, beat well then pour in the wok. Stir fry and mixed well everything. * Off heat and transfer to a plate. * Sprinkle with or without the chicken floss, either way is nice. * Serve hot and enjoy.

Serves 6 to 8 people. Ingredients: Olive oil 2 garlic cloves 2 large tomatoes or 1 can peeled tomatoes 4 celery stalks diced 1 small Cauliflower Broccoli 1 medium onion,diced 5 small potatoes, diced 1 can Beans red (drained and cleaned) Chicken stock (cube or liquid concentrate) – Vegetable stock for vegetarians. 1 /4 lb Macaroni or Spaghetti – (replace with low-carb pasta) 2 tbsp fresh basil,chopped 4 Tbsp salt and 1 Tbsp pepper 1Tbsp garlic powder 7 Basil leaves Parmesan Cheese
Directions:
Cooking the tomato sauce 1) Heat olive oil in skillet or small pot. Saute garlic and tomatoes. Then simmer on low heat about 20 minutes, stirring occasionally.
Cooking the Minestrone 2) In a large pot heat 4 Tbsp olive oil. Add the diced onion and potatoes and cook. 3) Add the diced celery and cook. 4) Add the diced cauliflower. Season with salt, pepper and garlic powder to taste. 5) Add enough water to cover the mixture to about ¾ of the pot. 6) Boil the mixture and add the chicken stock (1 cube or 1 Tbsp liquid concentrate) 7) Simmer for 15 minutes. 8) Add the broccoli. 9) In another pot, boil the pasta. 10) Pour the tomato garlic sauce from the small pot into the large pot soup mixture. 11) Add basil leaves. 12) Add the beans to the soup and simmer for about 10 minutes. 13) Taste and adjust salt and pepper to your liking. 13) Drain the pasta and add it to the soup.
Serve and garnish with celery & Parmesan cheese.
