Easy and Delicious White Clam Sauce with Linguini Recipe
Today we are preparing White Clam Sauce with Linguini! Fresh clams are a must for this White Clam Sauce recipe. This is a simple recipe using only a few fresh ingredients, such as Extra Virgin Olive Oil, Garlic, lemon, parsley, basil, and of course, baby clams.
In the Liguria region of Italy, east of Genoa, Spaghetti alle vongole (veraci) means spaghetti with small baby clams in the shell, with a white wine/garlic sauce. Linguine also may be used for the pasta in preference to spaghetti in which we used for this White Calm Sauce recipe.

White Clam Sauce (1 lb. of Linguini or Spaghetti):
3 dozen baby clams (Shuck a dozen & save clam juice)
2 tbsp of minced fresh garlic
¼ cup of Extra Virgin olive oil
¼ cup of chopped fresh Italian parsley
¼ cup fresh basil ribbons
1 teaspoon of crushed red Pepper
1/4 pond of unsalted butter
1/cup of white wine (optional)
Season with salt & black pepper

Ingredients
1.5 lbs Manila clams
2-3 tablespoons olive oil
1 yellow onion
1 bulb of fennel
2 heads of garlic
Heavy pinch chili flakes
3/4 cup white wine
1 bunch parsley
1 lemon
1 baguette
Salt
Variations:
Feel free to add some canned tomatoes with the onion and fennel to make a red sauce version. You can easily turn this into a pasta by taking the open clams out, throwing in al dente cooked pasta and tossing it around and finally adding the clams back in.

Garlic and Chilli Cockles - 蒜香伴血蚶

This spicy-garlicky dish will have you slurping the rich ‘hum’ juices and licking your fingers for more! For most of us Singaporeans, we can get these boiled cockles at the hawker centre, having fun prying and picking them open, and dipping them in punchy sambal belacan sauce. Cockles have long had a bad reputation of being the harbinger of hepatitis, but with the proper handling and thorough cooking, you shouldn’t have anything to worry about! They are also known to be high in iron and great for people with anemia.
Our version presents these cockles on a half-shell, topped off with a rich chilli and garlic sauce, with Shaoxing wine adding a touch of luxury to the dish. It can be enjoyed as a warm or cold dish, to which you prefer. It is important to remember to soak the clams in salted water to purge them of any sand, no one likes a gritty cockle!
