How To make Garlic Potatoes with Chicken
2 lb Thin-skinned red and/or
--white potatoes (about 18) 1 T Olive oil
1 Onion quartered
1 Whole chicken (3 1/2 lbs)
1 Bulb garlic, cloves peeled
3 T Minced, drained oil-packed
--dried tomatoes 2 t Fresh rosemary leaves
Salt and pepper Fresh rosemary sprigs (opt.) Scrub potatoes. In a 500F oven, heat oil in a 10" by 15" roasting pan until hot, about 1 1/2 minutes. Add potatoes and onion; shake pan to coat vegetables with oil. Stand chicken upright on a vertical roaster at one end of pan. (Or place chicken on a V-shaped roasting rack and surround with potatoes and onion.) Cook 15 mintues, then add garlic and cook 30 minutes more, stirring vegetables every 10 mintues. Remove chicken to platter. Stir tomatoes and rosemary leaves into potato mixture; arrange alongside chicken. Garnish with rosemary sprigs; salt and pepper to taste. Arrabbiata Garlic Chicken with Potatoes
Chicken breast with garlic, chili in a tomato sauce. This recipe also has the addition of potato so it’s a complete meal. You could also add chopped spinach for additional greens.
Arrabbiata translates to Angry, that’s because of the chili factor as it’s meant to be a hot spicy sauce. If you make it a day in advance, and then reheat it, it will taste even better or make extra and have a great meal the following day. The flavours seem to intensify overnight.
I also added cheese to this sauce, to bring it up a level, you can also use Parmesan cheese for this recipe, but I prefer Pecorino for this, it just gives it that little extra yumminess. Either way, I’m sure you’ll love those intense flavours. Enjoy my Arrabbiata Garlic Chicken with Potatoes.

Garlic Butter Chicken and Potatoes
| Ingredients |
1 1/2 lb (650g) chicken breast, cut into strips
1 1/2 lb (650g) baby yellow potatoes, quartered
1 tablespoon olive oil
3 tablespoons butter, divided
5 garlic cloves, minced
1 teaspoon fresh thyme, chopped
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh oregano, chopped
Salt and fresh cracked pepper
Crushed red chili pepper flakes, optional

The marinade
1/4 cup soy sauce (or coconut amino if you’re strictly paleo)
1 tablespoon olive oil
1 tablespoon hot sauce (we used Sriracha)
Fresh cracked pepper

| Instructions |
1. To make the garlic butter chicken with potatoes: In a large bowl, combine the chicken strips with soy sauce, olive oil, pepper, and hot sauce. Set aside to marinate while you cook potatoes.
2. Parboil the potatoes in boiling salted water for 8 minutes. This will accelerate cooking time in the skillet and ensure a nice golden crust on the potatoes.
3. In a large skillet over medium-high heat, mix 1 tablespoon olive oil and 1 tablespoon butter. When butter is melted, add drained potatoes. Cook potatoes for about 4 minutes, stir and cook an additional 4-5 minutes until potatoes are golden and fork-tender. Transfer sauteed potatoes to a plate and set aside.
4. Keep the same skillet over medium heat and add remaining 2 tablespoons butter, lay the chicken strips in one layer in the skillet, keeping the drained marinade for later. Add garlic and red chili pepper flakes to the chicken. Cook chicken strips on each side for 1 minute each until nicely browned – adjust timing depending on how you like your grilled chicken.
5. Stir in the reserved marinade and cook with chicken until the marinade is cooked. Add the fresh herbs and give a quick stir. Then add the sauteed potatoes back to the pan and heat through. Adjust seasoning with salt and pepper if necessary.
6. Remove from heat and serve immediately your Garlic Butter Chicken Recipe with sauteed Potatoes, garnished with more crushed chili pepper, fresh herbs, and a sprinkle of parmesan cheese over the Chicken and Potatoes if you like. Enjoy!
