How To Make Roasted Rosemary Potatoes

As a culinary professional it is important to be able to take the simplest dishes and turn them into something special. Learn how to make these roasted rosemary potatoes. Enjoy this simple dish with roasted chicken or reheat the following morning as breakfast potatoes!
ROASTED ROSEMARY POTATO RECIPE:
Ingredients:
3 pounds small red potatoes
¼ cup quality olive oil
2 tsp salt
1 tsp ground black pepper
6 cloves minced garlic
2 tbsp chopped fresh rosemary
Directions:
1. Preheat oven to 400F degrees.
2. Cut the potatoes in quarters add to a large mixing bowl. Also add the olive oil, salt, pepper and garlic and toss multiple times until thoroughly coated.
3. Transfer the potatoes to a foil lined baking sheet and spread into one layer. Don’t overcrowd the potatoes.
4. Roast in the oven for about 1 hour or until potatoes are browned and crispy. Turn a couple of times during the cooking process to ensure even cooking.
5. Remove from oven and toss with fresh rosemary and season to taste. Serve hot.

An easy Lemon Rosemary Chicken recipe that requires simple ingredients! The chicken is seasoned with lemon pepper seasoning, seared and then cooked in a simple lemon rosemary butter sauce, the key ingredient being Rosemary. It starts with the humble chicken breast, just a few shakes of lemon pepper seasoning and a quick sear in a hot pan-grill. While that’s happening, we prepare a mashed potato on the side along with stir-fried assorted vegetables. Marinating the Chicken
2 pcs. Chicken Breast
1 tbsp Oil
2 tsp Mustard paste
1/2 tsp Garlic (finely chopped)
1/4 tsp Rosemary (crushed)
Salt (as required)
1/2 tsp Black Pepper (crushed)
1 tsp Lime Juice
1 tbsp Refined Flour
Grilling the Chicken
1 tbsp Oil
For Mashed Potato
2 tbsp Butter
1 cup Potato (boiled & mashed)
1/8 tsp Nutmeg Powder
Salt (as required)
1 tsp Black Pepper (crushed)
3-4 tbsp Milk
2 tbsp Fresh Cream
For the Veggies
2 tbsp Oil
1 tsp Garlic (finely chopped)
1 cup Assorted Vegetables (carrot, capsicum & zucchini)
1 sprig Rosemary (chopped)
1/2 tsp Black Pepper (crushed)
Salt (as required)
For the Sauce
3-4 tbsp Water
1 tsp Mustard Paste
4-5 Lemon Slices
1 sprig Rosemary
2 tbsp Water
1 tbsp Fresh Cream

My simple quick and easy lemon garlic rosemary roast chicken has immense flavor and only requires the usage of simple ingredients, such as fresh lemon juice, garlic, rosemary, and italian seasoning just to name a few. Oh, and did I forget to mention this lemon garlic roast chicken is juicy and tender.

Making a roasted chicken is very easy to do (anyone can do it) and the results are succulent.
I like to add lots of vegetables to the pan, like potatoes, carrots, onions, garlic, and lots of rosemary and wine.
The wine really adds a lot of flavor to those potatoes and carrots and the wine cooks out leaving the flavor behind.
To keep the chicken juicy as it roasts, I like to add a butter, garlic, rosemary rub just under the skin on the breast area. This way as the bird cooks, this rub baste the breast meat while it cooks to keep the breast meat from drying out.
And it tastes wonderful.
It's really important to cook your chicken thoroughly meaning get the chicken up to 165 degrees F minimum to kill any nasty bugs like salmonella . I like to use a digital thermometer for this as they read the temperature in a matter of seconds.
Ingredients:
3 to 5 lb. roasting chicken
3 or 4 gold or red potatoes, cut into quarters
2 or 3 carrots, cut into bite size pieces
8 to 10 stems fresh rosemary
white wine
1 onion, red or yellow, sliced
1/2 cube butter, softened
1 bulb of garlic
olive oil
smoked paprika
salt and pepper
Pat the chicken dry with paper towels. Don't bother with rinsing the bird. All that accomplishes is to spread bacteria around your kitchen. You know how the water droplets splash around no matter how hard you try not to?
Thats just spreading bacteria all over your sink and counter making it a breeding ground for cross contamination.
Place the onion in the dish to create a place for the chicken to rest. After placing the chicken on top, toss in the potatoes, carrots, garlic and rosemary around it.
Mix the butter, finely chopped rosemary and minced garlic clove together and rub under the breast skin. Pour wine on the vegetables.
Toss the rest of the garlic cloves in the chicken cavity along with more rosemary stems.
Pour some olive oil over the top of chicken and rub around. Sprinkle smoked paprica and rub it into the oil over the whole chicken.
Bake at 425 degrees F. for somewhere between 1 hour and 20 minutes to 1 hour and 30 min. or the internal temperature reads at least 165 degrees F. This is a gluten free recipe.
