Best Gluten-free Waffle | Savory Chickpea Waffle with Smoky Tofu Crumble & Yogurt

This will become your new favorite gluten-free waffle! Here’s the recipe:
(Veganized recipe by Danny Seo, “Naturally Delicious”)
For the waffles (Makes 4):
1-1/2 cups chickpea flour (I used @bobsredmill
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon (I used Origine Naturals)
2 Tbsp natural cane sugar, turbinado or coconut sugar
1-1-2 cups plain unsweetened plant milk
2 flax eggs (see note)
1/4 cup coconut oil, melted
Cooking spray
Note: For each flax egg, dissolve 1 Tbsp ground flax into 3 Tbsp water for 5 minutes)
DIRECTIONS
1. Preheat waffle iron to medium high.
2. In a bowl, whisk together the dry ingredients. Make a well in the center and add milk, coconut oil and flax eggs. Whisk well.
3. Coat waffle iron with cooking spray then pour in 1/4 of the batter and cook according to waffle iron manufacturer’s directions. Remove and keep warm in low oven while you make the other waffles.
For the tofu crumble:
Use 1/4 block of a 14 ounce block of tofu for each serving.
Preheat small skillet to medium heat. Add olive oil then crumble in tofu. Season to taste with black pepper, onion and garlic powder, smoked paprika, a dash or two of sausage seasoning and a couple dashes of liquid smoke. If you don’t have sausage seasoning, add a pinch of salt, red pepper, sage and a pinch of sugar to the tofu. Cook until it crisps and resembles cooked sausage. Taste and adjust seasoning as needed.
Serve each waffle with maple syrup, one serving of the tofu crumble and a dollop of vegan yogurt or vegan sour cream (I used So Delicious coconut yogurt).

Crispy Sabudana Waffles | Super yummy breakfast
If you are a sabudana lover then you must try these super crispy sabudana waffles. It’s easy and quick to make.
Ingredients:
Aloo- 1
Sabudana-1 cup
Onion
Grated carrot
Ginger garlic paste
Coriander leaves
Jeera
Salt
Peanut chutney powder (secret ingredient)
Lemon
Method:
1. Add soaked sabudana and all the ingredients mentioned above to a bowl.
2. Mix it well and make a patties.
3. Grease the waffle maker with some butter and place the patty and close.
4. Cook it till it turn golden brown.
5. Enjoy this amazing waffles with some green chutney or Ketchup.

-Apple- 100g
-Coconut oil- 20g
-Plant milk- 80ml
-Chickpea flour 160g
-A pinch of salt
-Hemp seeds- optional
-Baking soda- 1/2tsp
-Apple cider vinegar/lemon juice- 1tbsp

Vegan and Gluten-free Savoury Chickpea Waffles
A naturally gluten-free, high protein waffle made with garbanzo bean flour. This batter is so easy to assemble and normally, eggless waffles do not turn out the best, but this recipe is a game-changer!!
What you need:
- ½ cup Chickpea flour
- ½ cup Water
- 2 tbsp Avocado oil
- 1 clove Garlic, finely minced
- ¼ cup Onion or shallot, finely chopped
- 2 tbsp cilantro, finely chopped
- To taste Sea salt and freshly cracked black pepper
PROCEDURE
1. In a bowl, add the chickpea flour and season with salt and pepper. Slowly add the water and whisk until smooth. Add 1 tbsp of oil and whisk to combine. Cover with plastic wrap and let the batter set for 2 hours.
2. Preheat your waffle iron. Heat an oven-safe skillet over medium heat, add the remaining 1 tablespoon of oil, and sauté the onions and garlic for 2 minutes. Stir in the cilantro, transfer the mixture into the chickpea batter, and stir to combine.
3. Pour the chickpea batter into your hot waffle iron and cook for 5-6 minutes, or until golden and crispy! To serve, cut the chickpea waffle into wedges and dollop with guacamole or salsa.
Notes:
- If you do not have a waffle iron, do not fret, instead all you have to do is preheat the oven to 425F in Step 2. Then, cook your onions, garlic and cilantro in an oven-safe pan. In Step 3, instead of pouring the chickpea batter into the waffle iron, you would pour the batter back into the non-stick skillet and place into the preheated oven for 15 minutes.
- Leftovers can be stored in the fridge for up to 4 days and reheated in a toaster oven.
