How To make Fruit and Nut Muffins
1 c Sugar or less
1 c Applesauce
1/4 c Oil
3 ea Egg whites
3 tb Skim milk
1 c Whole wheat flour
1 c Unbleached white flour
1 t Baking soda
1 t Baking powder
1/2 ts Cinnamon
1/4 ts Nutmeg
1/4 c Chopped walnuts
1/2 c Raisins
1/2 c Chopped dates
Preheat oven to 350 degrees. In a large bowl combine sugars, applesauce, oil, egg whites and milk. Mix thoroughly. Add flours, baking soda, baking powder and spices. Combine until well mixed. Stir in nuts, raisins and dates. Spoon into lightly oiled or paper lined muffin tins and bake for 20-30 minutes. Makes 36 muffins. ~

TIP -
1) Mattha/Buttermilk should always be used at room temp.
2) Instead of buttermilk, use 1/2 cup Curd + 1/2 Cup water.
3) Butter should be melted.
4) You can use white sugar instead of brown sugar.
5) Cover the tray with a towel after baking to retain moisture.

Banana Nut Muffins - Banana Nut Bread - The Hillbilly Kitchen
These are the best banana nut muffins you will ever eat. I'll put mine up against anyone else's any day of the world. This is a great way to use your ripe bananas and keep from throwing them away just because they are a little soft.
This is an easy recipe that I believe is good for beginners. It's pretty hard to mess these up as long as you get them done without burning them. Keep an eye on them. They shouldn't fall just by opening the oven door occasionally.
This recipe will make about 24 muffins or can be baked in a single loaf pan, if you are in the mood for banana nut bread. It will take about an hour to bake in a loaf pan.
Be careful. If you take them out of the oven before they're done they will fall every time!

Ingredients:
100 g rolled oats (1 cup)
pinch of salt
6 g baking powder ( 1 1/4 tsp)
1/2 teaspoon cinnamon
2 eggs (Replacement: 3 tablespoons water + 3 teaspoons baking powder + 2 teaspoon vegetable oil
50 g eritrytol/green sugar (4 tbsp)
1 tsp vanilla extract
25 g melted butter (1 3/4 tbsp)
1 big carrot (90g/3.2 oz)
50 g chopped walnuts(1/2 cup)
bake 20-25 minutes at 180°C/ 360°F

Chunky Banana Bran Muffins

Yield: 10 to 12 muffins
Ingredients
1 cup unprocessed wheat bran
1 cup buttermilk (shaken)
4 tablespoons unsalted butter, at room temperature
1/4 cup light brown sugar, lightly packed
2 extra-large eggs, at room temperature
6 tablespoons unsulphured molasses
1 teaspoon grated orange zest
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup raisins
1 cup large-diced bananas
1/2 cup chopped walnuts
Directions
Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.
Combine the bran and buttermilk and set aside. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran/buttermilk mixture and combine.
In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined. Don't overmix it! Fold in the raisins, bananas and walnuts with a rubber spatula.
With an ice cream scoop or large spoon, fill the muffin cups to the top and bake for 25 to 30 minutes, until a cake tester comes out clean.
