How To make Fruit Tarts

cheese tart shells:
1/2 c Vegetable shortening
5 oz American cheese spread;1 jar
1 1/2 c Unbleached flour
1 x filling:
2 ea Navel oranges;peel & section
8 1/4 oz Pineapple; crushed, 1 cn
1/4 c Sugar
5 t Cornstarch
1/8 t Salt
1/2 c Orange juice
1 t Lemon juice
3/4 c Cheddar; sharp, shredded
CHEESE TART SHELLS: Combine the shortening and cheese spread in a medium bowl. Cut flour into the cheese mixture with two knives until well blended. Shape into a roll 1 1/4-inch in diameter and 12 inches long. Wrap completely in waxed paper or plastic wrap. Refrigerate for 1 hour or longer. Preheat oven to 375 degrees F. Remove the dough from the refrigerator and unwrap. Slice 1/8-inch thick. Using 12 (2 3/4-inch) muffin cups or 3-inch tart pans, place 1 slice of
dough in the bottom of each. Overlap 5 slices around the outside of each. Gently press together. Pierce the bottoms and sides with a fork. Bake 18 to 20 minutes in the preheated oven until lightly browned. Cool in the pans on a rack and gently remove the shells when cold to the touch. FILLING: Cut each orange section into 3 pieces and set aside. Drain the pineapple, reserving the syrup. Combine the pineapple syrup, orange juice, and lemon juice in a saucepan. Stir in the rest of the ingredients except the cheddar cheese, and cook, stirring gently, over medium heat until the mixture thickens and bubbles. Stir in the orange pieces and pineapple. Refrigerate for at least 1 hour. Spoon the chilled filling into the baked tart shells and sprinkle each tart with about 1 Tbls of the cheddar cheese. Refrigerate until serving time.

One batch:
• All-purpose flour: 12.3 oz | 350 g
• Powdered sugar: 5.3 oz | 150 g
• Almond flour: 1.8 oz | 50 g
• Salt: a few pinch
• Unsalted butter: 6.3 oz | 180 g
• Egg: 2.5 oz | 70 g
*** I made one batch of the recipe in the video. Make a half batch for one batch of the pastry cream! (Check how much I could fill in the video.)
Half batch:
• All-purpose flour: 6.1 oz | 175 g
• Almond flour: 0.9 oz | 25 g
• Powdered sugar: 2.6 oz | 75 g
• Salt: a pinch
• Unsalted butter: 3.1 oz | 90 g
• Egg: 1.2 oz | 35 g
• Bread flour to dust on a working surface: Some
???? Bake at 350 F | 176 C for 10 - 22 mins depending on the size until they are golden brown.

Pastry cream
• Whole Milk: 14.1 oz | 400 g
• Vanilla Beans: 1/4 stick
• Granulated Sugar: 4.2 oz | 120 g ( 2.1 oz | 60 g + 2.1 oz | 60 g )
• Egg Yolks: 4
• Corn Starch: 0.7 oz | 20 g
• All-purpose flour: 0.7 oz | 20 g
• Salt: A pinch
• Butter (Unsalted): 1 oz | 30 g
Whipped cream
• Heavy cream: 3.5 oz | 100 g (about 1/5 of the pastry cream)

Ingredients:-
350 gms. All purpose flour
2½ tbsp. Powdered sugar
225 gms. Butter (cubed & chilled)
2-3 tbsp. Chilled water
Ingredients:-
For custard
1 cup milk
1.5 tbsp. custard powder
3-4 tbsp sugar
toppings :-
any fruit of you choice
For making jam glaze :- take 1 tbsp mango/orange/apricot jam & mix it with 1 tbsp water & microwave for 30 secs. glaze is ready.

starch 25 g (2.5 tablespoons)
vanilla sugar 1 tsp

4 ounces (113 g) powdered sugar
8 ounces (226 g) unsalted butter, room temperature
1/2 teaspoon salt
1 teaspoon vanilla extract
12 ounces (340 g) all purpose flour
1 large egg room temperature
PASTRY CREAM INGREDIENTS ►
32 ounces (904 g) whole milk, substitute: almond, soy, coconut milk etc.
5 ounces (141 g) sugar
1 Tablespoon vanilla extract, use vanilla bean paste or 1 vanilla bean pod if desired
3 ounces (85 g) cornstarch
4 ounces (113 g) sugar
4 egg yolks
1 large egg
4 ounces (113 g) unsalted butter, room temperature
FRESH FRUIT TART INGREDIENTS ►
1/4 cup semi-sweet chocolate optional for keeping the crust from getting soggy.
2 cups mixed berries of your choice
2 Tablespoons apricot preserves for glazing any kind of jam will work.
1 Tablespoon water
