How To make French Potato Pancakes
1 1/2 c Frzn hashbrown potatoes,
-partially thawed or 1 1/2 -c grated potatoes 1 c Finely diced cooked turkey
1/2 c Sliced green onion
4 ts Lour
1 tb Parsley flakes
1/2 ts Dried chervil or summer
-savory leaves 1 ct 8 oz (1 c) frozen fat free
-egg product, thawed (or 2 eggs
2 tb Coarsely chopped ripe olives
1 ts Dijon mustard
4 ts Olive oil
1. In a medium bowl, combine all ingredients except olive oil; mix well. 2.
In a large nonstick skillet, heat 1 tsp of the oil over medium- high heat until hot. Spoon 1/4 of the potato mixture into the skillet; spread slightly. Cook 4-5 min without stirring, until bottom is brown. Flip pancake and cook other side for 3-4 minutes or until brown and thoroughly cooked. 3. Slide pancake onto serving platter and keep warm. Repeat with remaining oil and mixture. Garnish with additional parsley and green onion if desired.

How To Make French Potato Crepes (Rosti) & Goat Cheese Salad
Join my online French cooking classes ????????: Gluten free potato pancake recipe and a great vegetarian meal idea: this video recipe shows a quick and simple way on how to make gluten free potato pancakes (potato cake) as well as how you can use these potato pancakes to make a delicious and healthy vegetarian goat cheese salad with added toasted pine nuts, mustard vinaigrette and chives.

Ingredients:
For the Potato cakes (crepes):
500 grams of grated potatoes (suited for roasting)
I am using the Royal blue variety
1 whole egg
1 pinch of salt
1 pinch o pepper
2 tablespoons of olive oil for cooking
For the Salad:
1 handful of mixed lettuce leaves
2 tablespoons of toasted pine nuts
100 grams of marinated soft goat cheese
2 tablespoon of mustard vinaigrette dressing
1 teaspoon of chive (to decorate)
cooking time: for the potato cakes (crepes) about 7 to 8 minutes on each side.
I am using a 22 cm diameter nonstick pan to cook the potato cakes

Cheese potato pancakes!
This is a really easy recipe using ingredients you likely have at home already! The mozzarella can be easily substituted for your favorite cheese - cheddar is a great option.
— I recommend using a scale to measure the ingredients for best results
1 russet potato (400g)
1 tbsp sugar (9g)
1/4 cup cornstarch (34g)
Mozzarella cheese (10g each)
Salt for boiling the water
Plenty of oil for high heat cooking
Peel and dice your potato into small, even cubes. Boil in heavily salted water for about 12 minutes until soft and easily pierced with a fork. Drain the water when done and let it sit back in the pot for about 30 seconds to remove excess water. Add salt to potatoes if your water was not salted enough.
Add the cornstarch and sugar, then mash and mix well until combined. Separate into 5 pieces (80g each), roll into a ball, flatten it, add your cheese, then repeat the process.
Pan fry on medium high heat with enough oil to cover the pan entirely. It should cook for 4 to 5 minutes on each side until golden brown.
Serve with your favorite sauce & enjoy!

potatoes (1/2 lb, 227g per person, I like Yukon Golds)
fat/oil (I like clarified butter)
salt
Peel the potatoes if you want to (I don't), grate them, rinse them in a little cool water, squeeze the water our of them, toss a little salt through them. Heat some fat in a pan over moderate heat, drop in the potatoes and spread them in an even layer. Cook until the bottom layer is golden brown, about five minutes.
Transfer the pan to the oven at 350ºC/180ºC (convection, ideally) and bake until it feels solid enough to flip, 10-20 minutes depending on how thick it is. Turn the cake out to a plate or a board, put a little more fat in the pan, and slide the cake back in to brown the other side, about 5 minutes.
Slide it out to a cooling rack, and if you want you can put the rack into the oven again for a few minutes to crisp the exterior and soften in the interior. Let it cool a bit before slicing.
