How to make Delicious AND Healthy Beef & Broccoli Spears in Oyster Sauce
Healthy eating does not mean your food can't be exciting. And here to prove my point is one of the tastiest and nutritious dishes you can cook beef and broccoli in oyster sauce.
Packed full of vitamins, minerals and iron, broccoli is one of the original superfoods. This recipe uses very little oil and only a little beef (thinly sliced so it goes a long way). The broccoli is ever-so lightly blanched so it retains all it's goodness and the sauce is light but incredibly tasty.
Could this be the holy grail of healthy dishes....? I'll let you decide.

For 2 people you will need
200g of beef - topside/sirloin steak/fillet steak
1 head of broccoli
1/2 an onion
2 cloves of garlic
1 tbsp oyster sauce
150 ml stock (of your choice)
1 tsp light soy sauce
1 tsp sesame oil
2 tsp sugar
A good pinch of salt and pepper
1 tbsp cornflour
1 tsp sodium bicarbonate
1 tbsp cooking oil for the stir fry

Tasty Beef and Broccoli Recipe - quick meal idea for school children - under 30 minutes

INGREDIENTS AND STEP:
* 1 & 1/2 lbs flank steak. Slightly freeze before slicing against strands of muscle for juicy tender cuts.
* Marinate steak at room temp, for 15 mins, with the following: 1 tbsp honey, pinch of salt, 1/2 tsp black pepper crushed, 1/2 tsp dark soy sauce, 1 tsp light soy sauce, 1 tbsp cooking oil, 1 whole egg, 1 tbsp cornstarch, 1 tsp minced garlic, and 1 tsp minced ginger.
* Stir fry steak on high heat 2-3 mins each side, with a splash of cooking oil, and set aside.
* In same wok, add a splash of cooking oil, 1 tsp minced ginger, and cook till fragrant, then add 1 large onion chopped into big pieces, and cook to preferred softness. Season each layer, as needed with salt and crushed black pepper.
* Then add 1 de-seeded Fresno chili or a pinch of chili flakes (for an optional layer of heat), followed immediately, by 1/2 tsp minced garlic, and stir fry for under 30 seconds.
* Need 2 heads of blanched broccoli (blanch broccoli for 2-3 mins in boiling water, seasoned heavily with salt. Then transfer broccoli immediately, from hot water into an ice water bath to stop cooking and retain vibrant green color, and fresh crunch.
* Stir fry for 2 mins, add 1 tsp oyster sauce.
* Add slurry- combo of 1 cup water, and 1 tbsp cornstarch, stir till thickens.
* Drizzle in 1/2 tsp toasted sesame oil, and add cooked steak. Then, stir fry for a further 1 minute, and serve with steamed rice, or mashed potatoes. Check out my old fashioned mashed potato recipe ????????
