GUACAMOLE:
2 lg Ripe Avocados, Mashed
2 Finely Chopped Tomatoes
1 md Chopped Onion
2 Jalapeno Peppers, Seeded And
- Finely Chopped 1 Finely Chopped Clove Garlic
2 tb Finely Snipped Cilantro
1 tb Vegetable Oil
2 tb Fresh Lime Juice
1/2 ts Salt
1 ds Pepper
FLAUTAS:
1 c Cooked Chicken, Finely
- Chopped 12 Flour Tortillas
Vegetable Oil For Frying Guacamole: Mix all ingredients in a glass or plastic bowl. Cover and refrigerate for at least 1 hour. Flautas: Spoon 1 tablespoon of the chicken across the bottom of each tortilla. Roll up tightly and secure with toothpicks. Heat 1 inch of oil to 350 degrees F. Fry flautas, turning once, until golden brown, about 2 minutes. Drain on paper towels; remove wooden toothpicks. Serve with fresh guacamole. Typed by Syd Bigger.

Hi everybody, these taquitos dorados ahogados in a delicious red sauce are absolutely delicious!! this is one dish that I can have weekly because it's easy and super tasty...I can use the leftover salsa for other dishes or especially with breakfast over eggs or beans etc...I hope you get to try it.❤
INGREDIENTS FOR CHICKEN AND BROTH
2 chicken thighs (skin off)
2 chicken legs (skin on)
1/4 tsp whole peppercorns
1 bay leaf
3 medium garlic cloves
1/2 small onion
1 large carrot (cut into big pieces)
2 celery ribs (pieces)
small bunch of fresh parsley
1 & 1/2 tsp salt
INGREDIENTS FOR SALSA
4 medium Roma tomatoes
1/4 small onion
2 medium garlic cloves
1/2 tsp dried oregano
4 serrano peppers (or your choice)
small bunch cilantro
1 Tbsp finely chopped onions
1 tsp chicken bouillon
1 tsp tomato flavored chicken bouillon
salt as needed
•grated colby Jack cheese (your choice)
•corn tortillas (about 15)
avocado slices or mashed
1/2 tsp garlic powder
1/2 tsp onion powder
sour cream
crema
chopped lettuce
few tomato slices

Rolled Crispy Chicken Tacos/Flautas
Servings: 33 tacos
Cook chicken in Broth
2 lbs bone-in, chicken breast
1/2 white onion, medium
6 garlic cloves
2 tomato, roma (6 oz)
1 jalapeno
2 carrots
1 TBSP Salt, kosher
1 tsp black peppercorns
4 ea sprigs of mint
Small bunch thyme
10 cups water
10 oz tomatillos
Pickled red onions
1/2 red onion, thinly, large
3 habanero
1 jalapeños
1/4 cup lime juice
1 tsp sugar
To taste white pepper
1 tsp dry mexican oregano
1 tsp salt, kosher
1/4 cup white wine vinegar
1/2 cup water
Make the salsa
Cooked tomatillos, onion, tomato, jalapeno, garlic.
2 cups broth
2 raw garlic, cloves
1/2 bunch cilantro
Prepare the shredded chicken
1 tsp kosher, salt
To taste white pepper (1/2 tsp)
2 TBSP smooth olive oil to fry the sauce
Season sauce at the end with 1/2 tsp of kosher salt.
Toppings
Cabbage, shredded
Mexican-style cream
Avocado, diced
Cotija cheese, crumble
Tomato, sliced
Other items you will need:

Toothpicks
Smooth olive oil/avocado oil as needed

Crispy Beef Flautas
2.7 lb beef
1 tbsp garlic
1 tbsp black pepper
3 tbsp Italian dressing
Half of pack onion dip
One teaspoon salt rub over meat please in oven 400 one and a half hour or two
Shred your beef
8 thin corn tortillas
3 cups of oil for frying
Guacamole sauce
Shredded lettuce
