Creamsicle Fudge
On my word, y’all!! This fudge is absolutely the best!!! If you love orange, you will love this too. It only takes a few ingredients to make this delicious treat, so go make you some today!!
Creamsicle Fudge
3- cups granulated sugar
1-1/2 sticks of butter, at room temperature
2/3 cup evaporated milk
1 package, 12oz white chocolate chips
1 7oz jar marshmallow cream
3 tsp orange extract
5 drops yellow food coloring
3 drops red food coloring
Line 8x8 inch pan with wax paper and leave some over the edges, you’ll use these edges for handles later. Slice the butter and add to a medium saucepan. Add the granulated sugar and evaporated milk. Melt and stir together and bring to a rolling boil and boil for 5 minutes, stirring constantly. Take off heat and add marshmallow cream and white chocolate chips and mix well. Take out about 1 cup of the mixture and set aside. Add the orange extract and food colorings. Mix well and pour into your prepared pan. Add the cup of the reserved mixture and with a butter knife swirl the two mixes together. Don’t over mix, you want the fudge to have a swirled appearance. Cool in the fridge for a couple of hours. Remove from the pan using the wax paper handles and place on a cutting board. Using a sharp knife, cut into roughly 1 inch pieces. Keep leftover fudge in an airtight container in the fridge. This will keep for a couple of weeks in the fridge. Enjoy!!

Recipe and written instructions:
Ingredients:
2 sticks (1/2 pound) Unsalted Butter
4 1/2 cups Granulated Sugar
13 oz can Evaporated Milk
12 oz bag Semi-sweet Miniature Chocolate Chips
2 cups Miniature Marshmallows (packed down)
1 Tablespoon Vanilla Extract
pinch Salt
extra butter to grease cookie sheet
Supplies:
6 quart Heavy Duty Cooking Pot
Wooden or Metal Spoon
18 x 26 Cookie Sheet / Pan
Potholders
Cooling Rack
Before you get started have all ingredients measured out and ready to add. Grease cookie pan with extra butter.
Over medium heat, begin melting two sticks of butter in the 6 quart pot. Add evaporated milk and the 4 1/2 cups of sugar, stirring constantly. As soon as the mixture comes to a low rolling boil, set the kitchen timer for 11 minutes and start timing, adjusting heat up or down to maintain consistent, rolling, low boil. Stir the mixture constantly, making sure to scrap along all areas of bottom and sides of pot.
After timer goes off, the mixture has been boiling and stirred for 11 full minutes, add the chocolate chips, marshmallows, vanilla, and salt. Cut off heat and stir vigorously until all ingredients are melted and mixed into smooth dark chocolate. Using potholders, pour the fudge mixture into the cookie sheet pan. Spread the mixture out evenly with the back of the spoon. It will begin to harden and set up immediately. Let cool completely and cut into serving squares.

Peanut Butter Fudge Recipe Demonstration - Joyofbaking.com
Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make Peanut Butter Fudge. Peanut Butter Fudge is a simple enough recipe; just a mixing together of butter, peanut butter, vanilla, and confectioners' (powdered or icing) sugar. I love how this type of fudge is so much faster and simpler to make than the old fashioned fudge which involves using a candy thermometer. You might want to include this candy in your Christmas baking as it makes a large batch and can be made ahead and stored in the refrigerator for about a week.
