This video has two parts , the first part is Fruit mixing & the second one is Baking the Cake with soaked dry fruits.The cake is loaded with lots of dry fruits and nuts that was soaked with rum for two weeks.I am using nuts like cashews, pistas etc on the time of baking. Full of flavour , moist & perfect to enjoy in the Christmas Eve......................

Assorted Dry Fruits:
RUM - 1 cup
Black Raisins - 1/2 cup
Kismis - 1/2 cup
Dried Kiwis - 1/2 cup
Apricot - 1/2 cup
Dried Figs - 1/2 cup
Red Cherries - 1/2 cup
Dates - 1/2 cup
Tutti Frutti (Red + Green + Yellow) - 1/2 cup
You can also use any other Dry Fruits like Candied pineapple , Blueberry , Cranberry , Blackcurrant etc to make more delicious cake.Enjoy........

1egg = 4tbsp of yoghurt/buttermilk
1egg = 1/2 banana smashed
1egg = 4tbsp apple sauce

Ingredients:
Dry Fruits Prep:
1 cup (130g) Dried Cranberries
1/2 cup (95g) Dried Apricots
1/2 cup (85g) Currants
1/2 cup (80g) Figs
1/4 cup (40g) Golden Raisins
1/4 cup (45g) Pitted Dates
1 tbsp Crystallized Ginger
2 nos (2tbsp) Orange Zest
2 nos (140ml) Orange Juice
175 ml Good Quality Dark Rum (For a non-alcoholic version, use same quantity Orange Juice)
You can also replace with mixed dried fruits of 480 to 500 grams
Wet Ingredients:
1 cup (227g) Softened Butter
1.5 cups (300g) packed Dark Brown Sugar
4 Eggs OR Egg alternatives (1egg = 4tbsp of Yogurt/Buttermilk)
1 nos (70ml) Orange Juice
Dry Ingredients:
1/4 cup (25g) Ground Almonds
2.5 cups (300g) All Purpose Flour
1 tbsp Cocoa Powder (optional)
3/4 tsp Cinnamon
1/4 tsp Cloves
1/4 tsp Nutmeg
1.5 tsp Baking Powder
1/4 tsp Salt
1/4 Cup (60g) Tutti Frutti
1 cup (150g) Mixed Nuts (Sliced Almonds, Chopped Pecans & Walnuts)

How to Make Rum Figs Pound Cake|Ohyoo Cooking
Rum Figs Pound Cake Recipe
Ingredients (210×57×60mm × 2)
Cake flour 165g
Baking powder 4g
Unsalted butter 200g
Brown sugar 165g
Eggs 165g
Almond flour 40g
Rum-soaked figs 120g
Rum-soaked figs
Dried figs 100g
Water 40g
Sugar 15g
Rum
Baking: 170°C/338°F 30min
Method:
1. First make the rum figs, boil the sugar, water and figs, turn off the heat and add rum to cool and set aside.
2. Beat the softened butter at room temperature until smooth, add sugar and beat until the volume increases, add the whole egg liquid in small amounts to the whipped butter, and the buttercream reaches a smooth state.
3. Add the sifted almond flour, cake flour and baking powder, fold well, add the cooled rum figs, continue to fold until the batter is smooth, pour into the mold and bake.
4. After baking, heat and melt the sugar and water, brush on the cake, cool, seal and refrigerate overnight for best results.

This Christmas Fruit Cake is a highly requested recipe. This is one of my favourite fruit cake recipes and is perfect for the Holiday Season and to serve at special occasions too.
Ingredients -
For soaking the dry fruit –
100g sultanas
100g raisins
100g currants
100g mixed citrus peel
50g candied / glaced cherries
50g candied ginger
240ml dark rum
For the caramel –
1 cup sugar
1/2 cup hot water, from a recently boiled kettle
For the cake –
200g butter, at room temperature
200g dark brown sugar
4 eggs
1 tsp Vanilla bean paste / vanilla extract
2 tbsp Treacle
120ml Caramel (recipe included)
Zest and juice of 1 orange
250g all purpose flour
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/8 tsp ground cloves
Dry fruit, previously soaked
50g cashew nuts, chopped
45ml dark rum

It is full of dried fruits and nuts, laced with alcohol over several weeks, and often covered with marzipan and royal icing. The problem is that it's both expensive to make and it needs time to age. Luckily, there is a much simpler version of this cake for the last minute baker, and I call it an Easy Fruit Cake.

All purpose flour - 1 tbsp
Egg - 2
Sugar - ½ cup (100 g)
Butter(melted) - ⅓ cup (80 ml)
Yogurt - ½ cup (120 g)
Vanilla extract - 1 tsp
All purpose flour - 1 ¼ cup (160 g)
Baking powder - 1 ½ tsp (6 g)
Salt - ¼ tsp
Pan size : 20 x 10 x 7centimetres
Bake in preheated oven (180°C) for 35 - 40 mins
