How To make Fig Jam Muffins
JAM:
1 c California dried figs
2 c Cold water
1 c Granulated sugar
Salt 1/4 ts Cloves
BATTER:
2 1/2 c Sifted all-purpose flour
4 ts Baking powder
1 ts Salt
2 tb Granulated sugar
6 tb Shortening
3/4 c Milk
2 Eggs
For Jam: Rinse and drain figs. Clip stems and grind or chop figs fine. Add water, bring to boil and cook and stir about 15 minutes or until water is absorbed. Add sugar, salt and spice. Cook and stir until of thick conserve consistency -- from 7 to 10 minutes. Sift together flour, baking powder, salt and sugar. Work shortening into flour mixture. Add milk and beaten eggs, stir to blend. Divide batter into 12 medium-sized greased muffin tins. With a spoon, make a "well" in top of each muffin. Fill each "well" with spoonful of jam. Bake in hot oven (425 F.) about 18 minutes. Serve hot with butter and remaining jam. Shortcrust pastry:
-190g flour
-113g butter
-50g sugar
-2g salt
-1 egg yolk
-28g chilled water
350F for 10 min
Custard filling:
-2 eggs
-60g butter, melted and cooled
-45g flour
-50g sugar
-60ml whipping cream
- 1 tsp lemon juice
-1/8 tsp salt
-1 tsp vanilla essence
-300g fresh figs
350F for 30-40min

Homemade fig jam: how to make it at home in a few steps!
This sweet fig jam is so easy to make at home! With its unique taste, it goes perfect with either sweet or savory dishes like muffins, bread, or cheeses.INGREDIENTS
1kg Fig
300 g sugar
100 icing sugar
Lemon juice
100ml water
METHOD
Peel each fig and place the flesh in a pot.
Add sugar and icing sugar and mix, then add the juice from 1 lemon. Macerate for 1 hour, then add the water.
Cook the figs for 1 hour on a low flame, mixing from time to time Blend everything while continuing to cook until thick.
Pour into sterilized jars and let stand overnight.
