6 Baked Italian Pasta Recipes you can't live without!

1) Mushroom Ragu Lasagna. Made from scratch with spinach pasta sheets. You won’t believe this is a meatless lasagna. Made using a variety of fresh and dried mushroom for that incredibly tasty reduced ragu flavour.
This recipe is totally made from scratch but of course you can cut corners. Buy ready made pasta sheets and use a food processor. Most of the effort goes into the ragu, and by using a food processor, the mushroom ragu can be made in 15 minutes, plus cooking time. You can make the bechamel in 15 minutes or less. When baking, you may need a little longer depending on your oven. Crispy edges are delicious but don’t over cook it unless you want to eat it all straight away. Otherwise it can be over crispy once reheated. Once cooled and refrigerated, slice it up and make portions, reheat in oven from cold for about 30 minutes. The corners will be crispy and delicious. Enjoy my spinach lasagna with mushroom ragu.
2) Spinach Cannelloni. This recipe uses spinach and ricotta and is one of the most popular of cannelloni with its creamy filling and oozy mozzarella cheese. It’s made using three different styles of cheeses, Mozzarella, Parmesan and ricotta. Cannelloni refers to a cylindrical style of pasta dish. The pasta is filled with a filling and covered in sauce. To save time and make life simple, you can buy pre-made cannelloni cylinder shape pasta or use fresh bought lasagne sheets and then roll them up. It’s best to first blanch any dry pasta in water for a few minutes. For this recipe I’m using fresh lasagne sheets (noodles) made with whole-wheat flour. Fresh pasta only needs one minute cooking.
3) Chicken Mushroom Lasagna, Breaking the rules!
Any chicken or lasagna lovers will love this recipe. Yes I know, I am breaking some traditional rules, but when something tastes so good, why not. You could buy ready made lasagna sheets (noodles). You could also use a kitchen food processor to chop all your vegetables and probably only have 30 minutes of preparation time. Now if you’re a passionate cook like me, then making your own pasta is absolutely worth it. I added chopped parsley to mine for extra freshness and a little more excitement than just plain pasta. (I doubled the recipe in the video as I always like to make extra for another day). I also prefer to use real chicken pieces rather than dried ground (minced) chicken. Slice the chicken by angling your knife blade 20 or 30 degrees, to create larger slices, but keep them as thin as you can. Make sure you caramelise the chicken (brown them) just a little on each piece for extra flavour. I find that three layers are enough, but if you have an extra deep dish, why not go another layer. Leave to rest 30 to 45 minutes before serving.
4) Cheesy Lasagne Spinach & Basil Rolls. Made with simple fresh ingredients, these cheesy lasagne taste incredible. If you love cheese and Italian flavours, then you need to make these. You can buy the lasagna sheets or make your own, but make sure you don’t buy the “no boil” ones as they won’t work. Buy the driest ricotta cheese you can find, usually in baskets, not those wet ones in tubs. If you can’t find it, place in a sieve and simply drain it in the fridge overnight. These can be made in advance, and taste even better the next day.
5) Three Cheese Lasagna. Made with fresh ricotta cheese and Italian sausage. This version has four layers of meat and uses fresh ricotta cheese instead of white sauce. With fresh basil and Italian sausage it takes it to another level. It’s fantastic dinner party food as once the work is done, you simply reheat the dish and serve square portions.
6) Mac and Cheese With two Italian Cheeses. If you’re a Mac & Cheese lover, this will be your new go to recipe! It has two types of Italian cheeses, for a tasty creamy pasta and a cheesy buttery top. Mac and cheese never existed in Italy, but certainly pasta and cheese did. Instead of macaroni I used penne pasta, so I suppose it should be called PEN and CHEESE!

Unsalted Butter - 100gms
Whole wheat flour - 3 tbsp
Milk - 2 cups
Chopped garlic - 10 to 12 cloves
Dijon mustard - 1 tbsp
Fresh cream - 250ml
Amul processed cheese - 1 cup
Mozzarella cheese - ½ cup
Cheddar cheese - ½ cup
Pasta water - 1 cup
Nutmeg - ½ tsp
Half cooked pasta (Macaroni) - 2 cups
Salt and Pepper to taste
Slices of bread - 4
Olive oil - 2 tbsp
Fresh Basil for garnish
Serve with Roasted veggies and bread

*note: I create all of my recipes in grams. Using grams will deliver the closest outcome to what you see in my videos*
CREAMY
2000g/2qt water
45g or 2.5tbsp salt
225g or 1/2lb elbow macaroni
25g or 2tbsp white distilled vinegar
splash of olive oil
30g or 1/2c shallot finely minced and rinsed
60g or 1/2c celery, finely chopped
30g or 1/3c scallion, thinly sliced
100g or 3/4 cup frozen peas (thawed)
100g or 1/4lb bacon, crispy and chopped
5g or 1/2-3/4c fresh dill
black pepper & salt to taste
DRESSING FOR CREAMY
Add the following into a high sided container:
1 egg
50g or 1/4c sour cream
25g or 2tbsp dijon mustard
15g 1 1/4tbsp sugar
10g or 3/4tbsp lemon juice
5g or 1tsp Worcestershire
5g or 3/4-1tsp salt
1/2 clove garlic.
300g or 1 1/3c neutral oil (light colored olive oil, grapeseed, canola)
Blend with immersion blender and stream in oil.
Add water and salt to med-lrg saucepan and bring to boil. Add pasta and boil for about 11min or until tender. Drain, reserving a few scoops of pasta water. Add vinegar and a splash of olive oil to drained pasta and allow to cool to room temp. Once cooled, add shallot, celery, scallion, peas, bacon. Add a couple of dollops of creamy dressing and a bit of pasta water and gently stir until pasta is well coated, but not swimming in dressing. Add dill, salt and pepper to taste, & stir to combine.
PESTO PASTA SALAD
2000g/2qt water
45g or 2.5tbsp salt
225g or 1/2lb pasta (I use shells)
25g or 2tbsp white distilled vinegar
splash of olive oil
300g or 1 1/4c pesto (recipe below) + more for garnish
200g or 1c mozzarella pearls, halved
200g or 1c cherry tomatoes, halved (I recommend sungolds)
Strong pinch grated parm
Add water and salt to med-lrg saucepan and bring to boil. Add pasta and boil for about 12min or until tender. Drain. Add vinegar and olive oil to drained pasta, stir, and allow to cool to room temp. Add pesto and stir to combine. Add mozz, tomatoes, and strong pinch of parm. Fold to combine.
PESTO for SALAD
Add the following to food processor and spin on high for 20-30sec or until well broken down.
100g or 3/4c toasted pine nuts or walnuts
100g or 5ish c basil
20g 1ish c parsley
30g or 1/2c shallot (minsed and rinsed)
100g or 1+c grated parm
225g or 1 3/4c cold olive oil
5g or 3/4-1tsp salt
30g or 2tbsp lemon juice
CLASSIC MOM'S SYLE/DELI PASTA SALAD
2000g/2qt water
45g or 2.5tbsp salt
225g or 1/2lb pasta (I use rotini)
25g or 2 tbsp white distilled vinegar
splash of olive oil
150g or 1/2-3/4c b-man's Italian Dressing (recipe below)
65g or 1/4c fresh mozzarella, diced
100g or 1/2c black olives, halved
50g or 1/2c pepperoncini, sliced
100g or 1 3/4c oil-packed sun dried tomatoes, sliced
60g or 1/2 of a med red bell pepper, diced small
60g or 1/4lb Genoa salami, sliced
75g or 3/4c grated parmesan
Add water and salt to med-lrg saucepan and bring to boil. Add pasta and boil for about 11-12min or until tender. Drain. Add vinegar and olive oil to drained pasta, stir, and allow to cool to room temp. Add dressing, mozz, olives, pepperoncini, sun dried tomatoes, red bell pepper, salami, and grated parm. Stir to combine and add additional dressing, parm, and/or salt to taste, if needed.
BMAN'S ITALIAN DRESSING
Add the following into a high-sided container, blend with immersion blender and slowly stream in 200g or 1c neutral oil (light colored olive oil, canola, grapeseed, etc)
25g red wine vinegar
45g or or 2 tbsp white distilled vinegar
20g or 1/3c red onion, rinsed
1 garlic clove
15g or 1/8-1/4 of a red bell pepper
25g 1 1/2tbsp grainy mustard
15g or 1 1/4tbsp sugar
5g 3/4-1tsp salt
1/4 tsp each of: oregano, basil, black pepper, and chili flake
