How To make Lemon and Garlic Chicken with Spring Market Vegetables
1 whole young chicken
about 3 1/4 to 3
:
1/2 pounds 2 teaspoons sea salt
2 teaspoons freshly ground black pepper
2 tablespoons olive oil
1 large vidalia onion diced
3 cloves garlic :
finely chopped
2 large lemons juice and zest
:
reserved 1/2 cup dry white wine
1 1/2 cups hot chicken stock -- (up to 1)
1/2 pound baby carrots with green tops attached
1/2 pound pencil asparagus
5 tablespoons butter
salt and pepper to taste fresh thyme leaves
Cut the chicken into 1/8-ths, separating the wings, legs, thighs, and breasts, and season the chicken parts with salt and pepper.
Heat the olive oil in a saute pan over medium heat. Add the chicken, skin side down, and brown well before turning to brown the meat side. When the chicken is well browned, add the onions, and cook until golden brown. Add the garlic and cook for 1 minute, add lemon juice and white wine, bring quickly to a boil, reduce heat to a low simmer, cover the pan with a tight fitting lid and cook for 5 to 8 minutes. Add 1 cup of chicken stock and continue to cook, covered, for an additional 15 minutes, or until the chicken is completely cooked. Add additional chicken stock if the pan dries out too quickly.
While the chicken is cooking, peel the carrots and place them in a saucepan with 1/4 cup water and a tablespoon butter. Season with salt and pepper and cook the carrots for 2 to 3 minutes over medium heat and set aside. Wash the asparagus and cut off any woody stem attached. Put the asparagus into a pot with 1/4 cup water and a tablespoon butter and salt and pepper. Cook over low heat for 2 minutes and set aside.
When the chicken is fully cooked, remove from the saute pan and place on a platter. Carefully ladle off any grease that has accumulated on the surface of the stock and swirl in the remaining 3 tablespoons butter to give a smooth silky finish.

Begin by preheating oven for roasting your garlic @325 for 15 minutes in EVO or Avocado Oil.
Recipe for GARLIC LEMON CHICKEN
Ingredients
6-8 Boneless Chicken Thigh skinless or with the skin
Sprinkle Pink Himalayan salt, Pepper and Dan-O spices on the chicken and set aside
1/4 cup Organic Avocado Oil or Organic extra virgin olive oil- OR
2 tablespoons of GHEE butter
6 large Roasted Organic Garlic Cloves, diced
1/2 to 1 full cup of Organic Bone Broth
Juice of 1 lemon
Zest of 1 lemon
Sprig of fresh Organic Rosemary (leaves only using your kitchen scissors)
3 Lemons thinly sliced
1 Bunch of Organic Parsley Chopped or use kitchen scissors
1/2 of an Organic Diced Sweet Yellow Onion
1 tablespoon of the following Organic seasonings: Herbs De Provence or Italian Seasoning, Pink Himalayan Salt, Pepper,
Black Pepper, Cumin, Oregano, and Dan-O's Seasonings.
Chopped fresh parsley and lemon slices for garnish
3 Zucchini's that are spiralized
*** Optional use your favorite noodle to serve
***Optional 1/4 cup of Soy Free Vegenaise to end cooking process and give a creamy texture
Dairy Free Parmesan Shreds
#INSTRUCTIONS:
Season the chicken with pepper, salt and Dan-O spices. Press saute function on the Instant Pot and Slow Cooker. Note: If you have an old fashioned Crock Pot you will saute the chicken in a skillet.
Cover the bottom of the pots and saute the chicken for 2-3 minutes each side to seal in the juices and keep the meat tender.
Remove the meat and put on a plate.
Add 1/2 the GHEE in the pot and stir in onions and garlic. Cook until translucent. Add all seasonings, lemon and lemon zest and bone broth. Turn off the saute.
Add remaining GHEE and place chicken back into the pot and close the lid.
Lock into place with a closed steam vent. Set your Instant Pot on manual and cook for 7 minutes (Crock pot for 6 hours low and slow).
Allow pressure to naturally release for 2 minutes and release the pressure.
Take chicken out and add in the Almond Milk or Veganaise if you choose to create a creamy texture. After combined and thickened a little add back in Chicken for warmth.
In a skillet (de-glaze) if you cooked the chicken and or add additional Bone Broth and add the Zoodles of choice. Cook for 5 minutes.
Serve noodles and chicken and broth and additional lemon slices with Fresh Parsley.
