How To make Festive Irish Cream Cheesecake
1 c Graham Cracker Crumbs
1/4 c Sugar
1/4 c Margarine, melted
1 Env. Unflavored Gelatin
1/2 c Cold Water
1 c Sugar
3 Large Eggs, Separated
16 oz Cream Cheese, Softened
2 T Cocoa
2 T Bourbon
1 c Whipping Cream, Whipped
Combine graham cracker crumbs, sugar, and margarine; press onto bottom of 9-inch springform pan.
Soften gelatin in water, stir over low heat until dissolved. Blend in 3/4 cup sugar and beaten egg yolks; cook stirring constantly, over low heat, 3 minutes. Combine cream cheese and cocoa, mixing at medium speed on
electric mixer until well blended. Gradually add gelatin mixture and bourbon, mixing until well blended. Chill until thickened, but not set. Beat egg whites until foamy; gradually adding the remaining sugar, beating until stiff peaks form. Fold egg whites and whipped cream into cheese mixture and pour over crust. Chill until firm. Garnish with chocolate curls and small silver candy balls, if desired. VARIATION: Substitute 2 T cold coffee for bourbon.

Ingredients (Serves 10 | Prep time: 15m | Cooking time: 5m | 313 calories & 21.8g fat p/serving):
- 100g Butter
- 200g Digestive biscuits
- 135ml Double cream
- 2½ Gelatin sheets
- 300g Cream cheese
- 60g Icing sugar
- 1 tsp Vanilla extract
- 75ml Baileys
- Cocoa powder (to dust)
Bailey's Irish Cream Cheesecake
This is my favorite cheesecake. The Bailey's Irish Cream Cheesecake.
Restaurant quality dessert
Ingredients:
Crust:
9 ounces of chocolate cookies or wafers or crackers (250g)
7 Tablespoons melted butter (100g)
Filling:
2 pounds (room temperature) cream cheese (900g)
1 cup sugar (200g)
5 eggs (room temperature)
1 teaspoon vanilla extract (5ml)
3/4 cup Bailey's Irish Cream (180ml)
1/4 cup heavy cream (60ml)
3/4 cup semi-sweet chocolate (160g)
Bake in hot water bath for 20 minutes @ 350F, then turn down oven to 225F and bake 110 minutes longer. Allow to cool to room temperature, then refrigerate overnight till cold.

This was a BIG HIT at work, as some co-workers had samples.
I saved 3/4 cup of the crust crumbs for garnish.
I never liked the garnish look, so I should have just used all of the crumbs and went up the side of the pan with all of the crumbs.

St. Patricks day BAILEY'S IRISH CREAM CHEESECAKE
Happy Saint Patricks Day! This week's video is a St. Pattys Day themed cheesecake. It's a baileys irich cream cheesecake. It does include alcohol so if you do not prefer to cook with alcohol, you can substitute Bailey's Irish cream coffee creamer. I know a lot of people make this holiday about drinking but the holidays are all about being with your family and with what is going on in the world lately we need that. So get in your kitchen with your kids and make this amazing recipe. Non alcoholic of course haha.
Along with this cheesecake I made a bailey's infused ganache and a bailey's infused whipped cream. It sound's like a lot but it's perfectly balanced. Both these video are in separate videos linked below. Both can be made in advance so you don't have to make them all in the same day and stress out. Baking should be fun. Not a stress.

Calling all adults! Try out this phenomenal recipe for an Irish twist on your plain old cheesecake. We're combining McVitie’s Digestives with Bailey’s Irish cream to make this classic dessert even better.

20 MINS. PREPARATION - 40 MINS. COOKING
Serves 6
INGREDIENTS
For the base:
1/3 cup unsalted butter
14 McVITIE'S DIGESTIVES© (150g)
1 tbsp sugar
For the topping:
800g soft cream cheese
1/3 cup Bailey's Irish cream
5 large eggs
2/3 cup whipping or heavy cream
RECIPE
1. Preheat the oven to 180°C/350°F. Grease and line a 20cm springform tin with parchment paper.
2. Crush the McVITIE'S DIGESTIVES©. Add the butter and the sugar, mix well and use this mixture to line the base of the tin. Ensure it forms an even layer, press firmly, then transfer to the fridge to set.
3. Blend all of the ingredients for the topping, then pour over the biscuit base. Level out the top and place in the oven.
4. Bake for around 40 minutes. When your cheesecake is almost set but still has a wobble in the middle, turn off the oven and leave the cheesecake to cool in the oven.
5. Refrigerate and allow to set before serving.
