How To make Festive Irish Cream Cheesecake
1 c Graham Cracker Crumbs
1/4 c Sugar
1/4 c Margarine, melted
1 Env. Unflavored Gelatin
1/2 c Cold Water
1 c Sugar
3 Large Eggs, Separated
16 oz Cream Cheese, Softened
2 T Cocoa
2 T Bourbon
1 c Whipping Cream, Whipped
Combine graham cracker crumbs, sugar, and margarine; press onto bottom of 9-inch springform pan.
Soften gelatin in water, stir over low heat until dissolved. Blend in 3/4 cup sugar and beaten egg yolks; cook stirring constantly, over low heat, 3 minutes. Combine cream cheese and cocoa, mixing at medium speed on
electric mixer until well blended. Gradually add gelatin mixture and bourbon, mixing until well blended. Chill until thickened, but not set. Beat egg whites until foamy; gradually adding the remaining sugar, beating until stiff peaks form. Fold egg whites and whipped cream into cheese mixture and pour over crust. Chill until firm. Garnish with chocolate curls and small silver candy balls, if desired. VARIATION: Substitute 2 T cold coffee for bourbon.

Triple Layer Baileys Cheesecake | Cupcake Jemma
Another boozy one for you because...Christmas! But this time I'm using a classic Chrimbo tipple - Baileys. Sweet, creamy and delicious, this stuff is like a naughty milk shake (but please drink it responsibly!!!) This cheesecake uses the distinctive flavour of Baileys's to ramp up the Christmas vibes. Get involved!
Recipe-
For the BBB...
100g Hobnobs (or other crunchy oaty sweet biscuits)
50g Amaretti biscuits
50g melted buttter
For layer 1-
300g cream cheese
60g icing sugar, sifted
1 tbsp Baileys
150g melted dark choc, cooled slightly
120ml double cream
For layer 2-
300g cream cheese
60g icing sugar, sifted
2 tbsp Baileys
120ml double cream
For layer 3-
100g dark choc chips, finely chopped
100ml double cfream
1 tsp instant coffee

This video is all about how to make a Baileys cheesecake. It is a no-bake baileys Irish cream cheesecake recipe. If you're looking for a dessert to impress your dinner guests, this no-bake Baileys Cheesecake is perfect!
I have been using this Bailey's cheesecake recipe FOR YEARS, and it has never let me down. It's my go-to recipe when entertaining. It works perfectly for Thanksgiving, Christmas, or any other occasion. The thick biscuit base and creamy filling with a touch of chocolate will satisfy everyone's sweet cravings. I love that it can be made ahead of time, so there is no need to stress on the day of hosting.
Recipe Details:
Ingredients
Base:
160 g butter
400 g digestive biscuits @McVitiesBiscuitsUK
Filling
600 g cream cheese
40 mls baileys @Baileys
100 g icing sugar
300 ml double cream (whipped)
100 g grated milk chocolate
Garnish
Grated chocolate or toppings of your choosing, e.g. Maltesers, chocolate buttons, etc.
Instructions
1. Melt the butter in a pan. Remove from the heat and add the crushed biscuits. Mix well until all the biscuits have absorbed the butter.
2. Press into the bottom of an 11-inch springform LINED tin (lined with parchment paper). Place in the fridge and allow to set for one hour.
3. Lightly whip the cream cheese, baileys and icing sugar together.
4. Fold in the whipped cream and grated chocolate.
5. When smooth, spoon evenly onto the biscuit base.
6. Refrigerate and allow to set for a further 2 hours.
Once set, remove from the springform tin and decorate as desired.

EASY NO BAKE BAILEYS IRISH CREAM CHEESECAKE
Ingredients
* 1 1/2 cups Oreo baking crumbs
* 5 tablespoons melted butter
* 900 grams cream cheese (about 32 ounces)
* 3/4 cup powdered sugar
* 1/4 cup Baileys Irish Cream Liqueur
* 300 grams white chocolate melted (12 oz)
* 100 grams semi-sweet chocolate melted (4 oz)
* 1 cup whipped cream or whipped topping
For decorating:
* 200 grams semi-sweet chocolate chopped (8 oz)
* 3/4 cup heavy whipping cream plus 2 teaspoons
* whipped topping or whipped cream, and chocolate shavings for garnish (optional)
Instructions
* Combine the Oreo baking crumbs and melted butter until moistened and crumbly.
* Press the mixture into the bottom of a 9-inch springform pan and refrigerate to set.
* Combine the cream cheese and powdered sugar in a large bowl, mixing with a hand mixer on medium speed (or in your stand mixer) until smooth.
* Add the Baileys and mix well until incorporated.
* Add the melted white and semi sweet chocolate in a steady stream while the mixer is running on low speed, until completely incorporated. Scrape down the sides of the bowl to be sure everything is incorporated.
* Fold in the whipped cream or whipped topping by hand until the mixture is fluffy and creamy and there are no streaks of white in the batter.
* Pour the cheesecake mixture into the prepared crust and smooth out the top with a rubber spatula.
* Refrigerate to set for 6 hours or overnight, or set in the fridge for 2-3 hours and then in the freezer for 2-3 hours before serving. OR, set in the freezer only for 4 hours.
For decorating:
* Melt the semi-sweet chocolate in the microwave on 50 percent power for 30-second increments until melted.
* Whisk in the 3/4 cup plus 2 teaspoons of heavy cream until a ganache forms.
* Drizzle the ganache over the chilled cheesecake.
* Top with whipped cream and chocolate shavings, and serve.
