EASY WEEKNIGHT GROUND BEEF CHILI
Adapted from The Food Lab
Sometimes even the best of us don’t feel like going all out. Here’s a much quicker weeknight chili that uses a few of the tricks learned from my Best Short-Rib Chili (page 259) and the 30-minute bean soup recipes (pages 196–200). I use ground beef here, which precludes real browning as an option, but a couple of smoky chipotle chiles added to the mix lend a similar sort of deep complex- ity. Serve the chili with grated cheddar cheese, sour cream, chopped onions, scallions, sliced jalapeños, diced avo- cado, and/or chopped cilantro, along with corn chips or warmed tortillas.
SERVES 4 TO 6
4 tablespoons unsalted butter2 medium onions, grated on the large holes of a box grater (about 11⁄2 cups)2 large cloves garlic, minced or grated on a Microplane (about 4 teaspoons)1 teaspoon dried oreganoKosher salt2 chipotle chiles packed in adobo, finely chopped2 anchovy fillets, mashed to a paste with the back of a fork1⁄2 cup Chile Paste (page 259) or 1⁄4 cup chili powder1 tablespoon ground cumin1⁄2 cup tomato paste2 pounds boneless ground chuck One 28-ounce can whole tomatoes, drained and chopped into 1⁄2-inch piecesOne 15-ounce can red kidney beans, drained1 cup homemade or low-sodium canned chicken stock, or water2 to 3 tablespoons instant cornmeal (such as Maseca)2 tablespoons whiskey, vodka, or brandy (optional)Freshly ground black pepper Garnishes as desired (see the headnote)
1. Melt the butter in a large Dutch oven over medium-high heat. Add the onions, garlic, oregano, and a pinch of salt and cook, stirring fre- quently until the onions are light golden brown, about 5 minutes. Add the chipotles, anchovies, chile paste, and cumin and cook, stirring, until aromatic, about 1 minute. Add the tomato paste and cook, stirring until homogeneous, about 1 minute.
2. Add the ground beef and cook, using a wooden spoon to break up the beef into pieces and stirring frequently, until no longer pink (do not try to brown the beef ), about 5 minutes. Add the tomatoes, beans, stock, and cornmeal and stir to combine. Bring to a boil, reduce to a simmer, and cook, stirring occasionally, until the flavors have developed and the chili is thickened, about 30 minutes.
3. Stir in the whiskey, if using. Serve with some or all of the suggested gar- nishes, along with corn chips or tortillas.
FAST AND EASY TURKEY CHILI RECIPE
A classic recipe made a variety of ways! This is my go-to because it's faster than dumping and stirring when I don't have all day for it to cook.
That is what I like about cooking, there is no wrong way! If you like the flavors and combinations of cinnamon put more in! You don't? Then don't! This is how my family and I eat chili and I hope you try it! Remember...
You can also use regular ground beef! Onions, chives, and Ro-Tel which is delicious!!
You will see in the video I brown the meat first. I like this step because the direct heat makes the flavors come alive!
Don't worry because if you are dumping and stirring for 5-6 hours it works as well!

Turkey Chili recipe ingredients
1 lb of ground turkey
1 half onion chopped (optional)
1 red bell pepper ( or green)
1 can of diced tomatoes
and/or Ro-Tel for extra flavor and heat.
2 cans of kidney beans or black beans
1 cup of chicken broth ( I used the whole can)
Spices:
1 tbsp Chili powder
1/2 tbsp Garlic powder
1 tsp salt ( more to taste )
1 tsp of pepper
1/2 tsp nutmeg ( optional )
1 tsp cinnamon (optional )
2-3 bay leaves ( optional )
everything is to taste and what you prefer
you can always buy the chili pre-made packet and put it in when browning the meat.
Optional toppings ideas:

sour cream
cheese
jalapenos

Crockpot Chili Recipe
INGREDIENTS
-1T olive oil
-1T butter
-1 red bell pepper, diced
-2T tablespoon garlic, minced
-2 pounds ground beef
-1 cup beef broth
-2T brown sugar
-1 can fire roasted diced tomatoes
-1 can tomato sauce (15 oz)
-2 cans kidney beans, rinsed and drained
-Sharp cheddar cheese
Homemade Chili Seasoning
2 1/2 tablespoons chili powder
2 teaspoons paprika
2 teaspoons cumin
2 teaspoons coriander
1 1/2 teaspoon oregano
1 teaspoon salt, I add more to taste
1/2 teaspoon black pepper
1/2 teaspoon onion powder
pinch of cayenne powder, to taste
MIX together in a small bowl
INSTRUCTIONS:
-To a large pot over medium heat, add the olive oil and butter. Once the butter is melted, add the onion and cook until translucent then add diced red bell pepper and garlic. Saute for 2 to 3 minutes.
-Then add the ground beef and cook until no more pink. I seasoned it with salt and pepper to taste. Drain meat and set to the side.
- Add the drained ground beef to crockpot, beef broth, brown sugar, roasted diced tomatoes, tomato sauce, and homemade chili seasoning. Mix all together, then add lid to crockpot and cook on HIGH for 6 hours or LOW for 8 hours.
Serve in a bowl and garnish with your favorite toppings! I just used cheese this time around but I love adding green onions, sour cream, and cilantro too! Enjoy with your favorite crackers or cornbread!

Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.
