How To make Farfel Pudding
SANDI brOOKS (WFCJ53B) 2 c Matzah farfel
Cold water 2 tb Margarine or oil
2 Eggs
1/2 ts Salt
1/3 c Sugar
1 Apple, pared, sliced/diced
1 Banana sliced
1/2 c Chopped nuts
Grease for the pan the COmplete Passover Cookbook, by Frances AvRutick. In a small bowl, cover the farfel with cold water, drain immediately. The farfel should be moist but not soggy. In a large mixiing bowl, beat the eggs with the oil or margarine.Add the farfel. Stir well. Add the apple or banana and the nuts. Gently mix. Pour the into greased 8" square pan. Bake in a 350 oven until brown, 30-40 minutes. Serves 6-8. This is the only recipe I have for this as it is not something I make. I do think that there were other farfel kugel recipes earlier. I would backdate and see if there are any still alive. Or post a note to Elaine Radis who has collected the Pesach recipes on her meal master. Apple Cranberry Matzah Crisp (Passover & GF Friendly )
Easy Apple Cranberry Crisp
“Passover and gluten-free friendly”
Ingredients:
2 cups of the matzah farfel or for gluten-free add 2 cups of Gluten free oats
1 can of whole cranberry sauce
4 Cups diced Honey Crisp apples (or any apple of your choice)
6 tablespoons softened salted butter
1 tsp. cinnamon
2 1/2 teaspoons fresh lemon juice
½ tsp. salt
1/3 Cup chopped salted pecans (optional)
3/4 Cup sugar
Instructions:
Mix together cranberry, apples, lemon, and salt in a bowl and set aside.
In a separate bowl mix together matzah farfel, sugar, cinnamon, 1/2 the pecans and butter.
Mix it with your hands until it blends altogether.
In a 9 inch round pie plate (greased) pour the apple mixture in first and then place the crisp topping on second.
Spread it evenly among the top and garnish with the rest of the pecans.
Bake at 350° for 50 minutes.
This recipe is so delicious and easy to make. You can top it off with some vanilla ice cream or whipped cream for extra yumminess!!! It can serve as a Passover side dish or dessert. Change it to the gluten-free version and it still remains just as satisfying and delicious!!

Pesach/Passover Matzah Farfel Pilaf
This pilaf is a fantastic alternative to many of the heavier Pesach sides. We enjoy farfel pilaf paired with sweet and sour meatballs, brisket, chicken piccata, or any dish that has a sauce.
This is another flexible recipe where you can add more or fewer vegetables to suit your tastes. Another great addition is to sprinkle the pilaf with toasted nuts for some crunch.

Some of you may be familiar with millionaire bars, well, I'b bringing you the Passover version of this delicious treat.
You will need:
4 sticks of unsalted butter
1/3 cup of water
1/4 cut of honey
4 sheets of matza or crackers if you prefer
2 2/3 cups of granulated sugar
Candy thermometer
Heavy bottom tall pot.

PREHEAT OVEN TO 350 DEGREES
OIL A 9 X 13 PYREX DISH
INGREDIENTS :
8 EGGS SEPERATED
2 CUPS OF VEGGIES (COMBINATION OF CELERY, MUSHROOMS, YELLOW, RED, ORANGE, GREEN PEPPERS)
1 LARGE ONION
1 BOX MATZAH FARFEL
2 TBS MATZAH MEAL
1 TSP OR MORE GARLIC POWDER
1 TBS OR MORE CANOLA OIL
KOSHER SALT AND PEPPER TO TASTE
1 TSP OR MORE OREGANO
FIRST CHOP ALL VEGGIES VERY SMALL AND ONION TOO
HEAT A LARGE SKILLET ON MEDIUM HEAT AND ADD SOME OIL
ADD ONION AND SAUTÉE THEN ADD ALL OTHER VEGGIES AND SPICES
( TASTE TO SEE IF YOU WANT MORE SPICES)
ADD MATZAH MEAL TO BIND TOGETHER
*ALLOW TO COOL FOR A FEW MINUTES*
IN A LARGE BOWL ADD MATZAH FARFEL ADD HOT WATER AND ALLOW TO STAND
PLACE IN A STRAINER AND PRESS DOWN TO TAKE THE EXCESS WATER OUT
ADD TO A LARGE BOWL AND ADD SOME SALT
ADD COOLED VEGGIES
IN A BOWL SEPERATE THE EGGS
WHISK EGG YOLKS AND ADD TO MATZAH MIXTURE THEN BLEND TOGETHER
IN A MIX MASTER BEAT EGG WHITES UNTIL STIFF
FOLD INTO MATZAH FARFEL MIXTURE WELL
ADD TO PYREX DISH
BAKE UNCOVERED FOR 1 HOUR
MAKE AHEAD OR SERVE RIGHT AWAY
