Classic Ensenada Fish Tacos | Rick Bayless Taco Manual
You may know these fried fish delights by another name: Baja Fish Tacos, which these days are much more well known in the U.S. than when I was first introduced to them in Ensenada 25 years ago.
The Mercado Negro fish market in Ensenada is home to a few styles of the classic, but after lots of investigation and lots of careful recipe testing (and lots of taco eating), I have my favorite version to share with you. Check out my recipe below! ????

Next we visit Sabina Bandera, who is chef and owner of the celebrated La Guerrerense Seafood Cart and Sabina Restaurant in Ensenada. She shows us a classic Baja dish, the fish taco, which she makes with battered and fried yellow tail, topped with cabbage, salsa roja, pico de gallo, pickled white onions with oregano, salsa verde, and crema. She also shows us her famous seafood pozol with octopus, squid, clams, and shrimp, chiles, epazote, and hominy. Her seafood tostadas and cocktails have earned her international acclaim and a visit from Anthony Bourdain.

3 Large Roma Tomatoes or 5 Small Ones
2 Chile Guajillo
10-20 Chiles de Arbol - Depending on your level of spice

Chilorio aka Red Chile Pulled Pork from Sinaloa | Rick Bayless Taco Manual
Even though chilorio was a once-little-known regional specialty from the northwestern state of Sinaloa, for the last several years, I’ve found pouches and cans of the stuff at the grocery store near my Mexico City apartment. Traditional chilorio—the stuff you find in the markets around Culiacan—is drier than the canned stuff, which more resembles American pulled pork. Market vendors shredded cooked pork and cooked it down in pork fat with red chile, salt and a little vinegar as a way to preserve it. Truthfully, that’s my favorite. The flavors are a little more concentrated and exciting. So that’s my approach here. The orange juice, by the way, while not very traditional, comes from a Sinaloan recipe I came across four decades ago. I love the way it underscores the natural sweetness of the pork. As is common in states that border the U.S., people enjoy these tacos with corn or flour tortillas.
