How To make Ensenada Chili Pot
2 pounds Chuck steak
cubed
1/4 cup Flour
2 tablespoons Chili powder
2 teaspoons Salt
1/4 teaspoon Pepper
1/4 cup Vegetable shortening
1 large Onion :
chopped
2 pounds Red kidney beans
1 can Tomatoes, (1 lb 13 oz)
1 Whole kernel corn :
(16 ounces)
4 ounces Piemento sliced
4 ounces Green chili peppers :
chopped
Hot cooked rice Shredded cheddar cheese
1. Trim excess fat from beef; shake beef cubes with flour, chili
powder, saltand pepper in a plastic bag to coat well. 2. Brown, a few at at time, in shorteinge, remove and reserve. STir in onion, saute 5 minutes; or until onion is soft. Spoon off any excess drippings; stir any remaining flour seasoning mixture into pan. 3. Drain liquid from kidney beans and add to pan; stir in tomatoes; bring to boiling; remove from heat. 4. Place beef in slow cooker with tomato mixture; stir in kidney beans adn corn; cover cooker. 5. Cook on low for 8 hours or on high for 4 hours; stir in pimiento and green chili peppers. 6. Spoon chili over rice in soup bowls. Top with shredded cheddar cheese.

Wet Batter:
2 lbs Alaskan cod fillets
2/3 cup all purpose flour
20 saltines crackers; pulverized
1 egg
12 oz beer or mineral water
1/4 tsp baking powder
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp onion powder
1 tsp chili powder
1 tsp oregano
1 tsp garlic salt
Dry mixture: you can get way with using (1/2) for 2lbs ????
1 c all purpose flour
2 tbsp cornstarch
1 tsp salt
1 tsp black pepper
Jalapeño sauce:**if you can’t find crema Mexican use 1cup sour cream and 2 tbsp pickled jalapeños juice ????
1 cup Mexican cream
2 tbsp mayo
5-6 chopped pickled jalapeños
1/2 lemon
Garlic salt
Black pepper
Pico de gallo:
1/4 purple cabbage
1/4 green cabbage
1/4 chopped onion
2 chopped roma tomatoes
1 chopped cucumber
Chopped cilantro
2 limes
Garlic salt
Black pepper

- 3-4 filetes de tilapia o pescado blanco
- tortillas de maíz para cada taco
CAPEADO PARA TACOS DE PESCADO
-1 y ½ tazas de harina de trigo
-1 y ½ cditas de polvo para hornear
- 1 cda mostaza Dijon
-1 huevo
-sal y pimienta al gusto
-1 cda de ajo polvo
SALSITA PICOSITA Y RICA
- 1/2 aguacate
- 3 cdas de crema o mantequilla blanca
- 4 cucharadas de mayonesa
- Media lata de chile chipotle en adobo (o 200 gramos)
- Una pieza de cilantro
- 4-5 cebollines
- El jugo de 1 limón
- 2 cdas de vinagre
- sal y pimienta al gusto
- Alrededor de 1 cda de ajo en polvo
OTROS
- ½ repollo o col blanca, desinfectada con 1 cdita de bicarbonato de sodio en 1 litro de agua
- ⅓ de cebolla roja en tiras
- 1 chile serrano (opcional)
- el jugo de 1 limón
- Alrededor de 2 tazas de vinagre (o lo suficiente para cubrir la cebolla)
